Cake Flour?
I have two recipes that call for cake flour. I went to Whole Foods today to buy the other products I needed and decided to pass on the organic $6 cake flour there and figured I'd get it at a regular supermarket for cheaper. I went to the grocery store and they didnt have cake flour, only bread flour. I assumed they were not the same and didnt buy it? What the heck IS cake flour anyway????

I've always found cake flour at Stop & Shop. It's on the top shelf in a box. Instead of on the bottom in a paper wrapper.
Here's what I found on the internet:
Cake Flour vs All-purpose Flour
One flour may be used for the other if their difference is taken into consideration.
When using all-purpose flour, remove 2 tablespoons of flour from every cup called for in the recipe and add 1 tablespoon of cornstarch.
*Cake flour is made of soft wheat flours. All-purpose flour is made from a blend of hard and soft wheat flours, not as high in gluten as cake flour.

I took a cupcake class and they told us if you don't have cake flour, you can just use regular flour and corn starch.
Basically, for every cup of flour that the recipe calls for, I put 2 Tbsp of corn starch in the measuring cup and fill the rest with flour.
I use this for all my recipes that call for cake flour and it works just fine.

This is exactly what I do, I can't get cake flour in the UK. However, I don't notice any difference at all in using cake or regular all purpose flour. Anyone notice a difference?

It's a box that is pink on the sides, red on the front. I get it at the supermarket. It's finer than all-purpose flour.

This exactly. It's basically making your own cake flour.

I think are interchangeable for most items. But something that was a little more tricky or delicate, I wouldn't take my chances on.

Cake flour usually yields a more tender, lighter texture. It's not really necessary for most recipes.
I never buy cake flour because I find it overpriced and you can do it yourself. Here is what you do -come simpy sift together 1 3/4 cup of flour with 1/4 cup of cornstarch. I sift together a couple of times and keep it in handy.
