This blew my mind. Recipe off of Pinterest
Coffee Cake in a cup. OM gosh this was so good. I even made a ton of substitutions and it was still delish.

My substitutions were as followed.
1 tbs of sugar instead of 2 (used raw sugar)
I used whole wheat flour instead of white
Used a whole egg instead of half
Used greek yogurt in place of sour cream
Double the amount of vanilla
For the crumb topping I did 1tsp sugar and doubled the cinnamon.
This was amazing. I couldn't eat the whole thing. Perfect thing to make when I don't want to be a piggy and bake a whole cake.

I made this again last night and I made two cups one for me and one for DH. Well he loved it which is saying a ton. Warning a cup is a lot. This is the second time I made this and I eat only a half of cup.

ugh made this tonight with such high hopes and expectations. mine was so gross! cake was hard and tasted very floury. i was so so so sad.

Did you mix it thourouly before microwaving? Did you use a whole egg? Did you microwave too long?

mixed thoroughly, half an egg. maybe micro'ed too long. don't know but it was really bad. maybe i mixed too much?

Made it for my dh with one full egg and stirred and he liked it.
