How much of each would you make
Every month my dept has a luncheon and each month different people are in charge of doing it. There are about 30 people in all and there are 4 or five people in my group that are doing it. This month is my month and we are making a brunch. We will have bagels, quiche, french toast casserole, a ziti and chicken thing and a green salad, and desserts. I am in charge of making egg salad, tuna salad and chicken salad. Now for my question - how much would you make...I always make way way way too much food. I was thinking of a dozen and a half eggs for the egg salad 10 cans of tuna salad and 1 bjs rotisserie chicken for the chicken salad. Would this be too little (in my head it is but as I said before, I usually have to throw out half of what I make for anything b/c it goes bad before we eat it). Keep in mind there are a few people who are vegetarians.
