Can I bake a cake on Thurs and serve it on Sat?

I am trying to plan out DS's 1st birthday. I need to make 5 cakes in all, and Thursday would be the best day for his party on Sat. Would they still be fresh?

I assume I wouldn't ice them until sat or is it better to ice them to keep in them moistness? What would be the bet way to store them? I have one cake carrier, but that won't hold them all.

I baked two cakes and 2 boxes of cupcakes on Thursday night, iced them Friday and served them Saturday and they were perfect!

You can definitely do it, though I do find certain recipes stay moist longer than others. I wouldn't ice them til Saturday. I would make the cakes themselves and double wrap them in cling wrap and freeze. Take them out a few hours before you frost to thaw.

You can also make a simple syrup that you can brush on the top of the cake to make sure it stays nice and moist, too. I'd brush it on after you've taken them out of the freezer.

And best of all, it's simple! lol!

Ingredients
1 cup white sugar
1 cup water

Directions
1.In a medium saucepan combine sugar and water. Bring to a boil, stirring, until sugar has dissolved. Allow to cool.

If I need a cake for Saturday, I usually bake it on Thursday, then wrap it in saran wrap and refrigerate it, and then decorate it on Friday night.
