What am I doing wrong re: cooking salmon?
Every time I make salmon, it tastes very fishy/gamey. I have made it both in the pan and oven. Is it the type of salmon that I'm choosing? Last time I got coho. Also I always buy wild.
I'm not sure what I'm doing wrong because when I eat salmon in restaurants it tastes fine.
Any advice is appreciated!

I find that it depends on where you get it and how fresh it is. I always buy Atlantic Salmon and the few times I've gotten it from Shoprite it's been very fishy because it wasnt fresh. I now buy only from Stop n Shop or Costco.
And generally I cook mine in the broiler.

I was watching Michael Symons on the chew this week and he mentioned that if you cook it too much it starts to get that taste.

Almost all fish is previously frozen no matter where you get it. I have the same issue as you. I started cooking it in the broiler as well and it turns out great this way.

Wild Salmon is more 'fishy' than farm raised. It's better for you.. but it does have a stronger flavor.
A lot of the 'fishy' flavor is held in the skin. I love the skin but if I don't cook it to crispness (rendering a lot of that fishy oil and fat)then I notice it's unpleasant.
You can try to mellow the flavor by giving it a marinade. I like Ginger, garlic, soy and olive oil. Let it take a bath for a few hours, then squeeze a little lemon into the marinade and give it another 10-15 minutes.
Take the filets out and score each one on the skin side about 1/3 through the filet with a sharp knife. Get your pan prepped with a little olive oil and pat the skin dry. Put the fish in the hot oil skin side down. Watch the fish and you will notice the color start to change and become more opaque from the bottom up. When the color changes about 2/3rds of the way up the filet flip it and let it finish cooking on the other side. You will see that the skin is nice and crisp. Take the fish out when it's cooked through and serve immediately.

I would only buy fresh salmon and I am very selective about where I buy it. Try Whole Foods or Fairway. In my experience, they have the best quality seafood. How you cook it is equally important. I like to bake it at 425 degrees. I cover it with olive oil, bread crumbs, garlic, basil and lots of salt and pepper. This gives it a nice taste and a crunchy texture. Good luck !

I agree that it is important where you buy it. I buy from fairway, whole Foods, wild by nature, H-mart, or a fish market. I usually bake it at 350 for 20-25 minutes. Salmon doesn't need to be well done. I recently bought frozen salmon at trader joes and it turned out pretty good! i was surprised since I usually try to buy fresh. Sometimes stores sell previously frozen, so look out for that if it is a concern of yours.

I buy it at Whole Foods too, and the wild caught is usually previously frozen & it is fine. Wild does havea stronger flavor, but I find Salmon tastes better if it is not overcooked. It should flake, but not be dried out.

My husband (the cook) asked if you 1st...wash or soak the salmon in water with lemons or lime, then towel dry before cooking...just soak the fish for 10-15 min, not long.

Make sure you are buying wild salmon and not farm raised. i dont do too much to it just put some old bay on it, some lemon and put it under the broiler. if it very thick and has the skin on it i put it in a pan first with the skin down to cook the bottom for like 10-15 mins and then the skin peels right off.

My MIL always brings salmon over when she comes and the last time she did this and I loved the way it tasted. She also marinated it in some polynesian marinade she found in WF. Its was so good.
I normally just make a mix of black pepper, sea salt and brown sugar and put a generous amount on the flesh side. I cook it on the skin side until almost done and then flip it. It is so good.

Exactly! No matter what type of fish I buy, I soak it in lemon and water and pat it dry before cooking!
