Chicken and Dumplings using left over rotiserrie chicken
I made this last night and I am having it again by myself tonight!
Ingredients: One left over rotiserrie chicken with some meat left on it Two cooked chicken breasts if there isn't much meat on chicken 3 carrots 3 stalks of celery 1 small yellow onion 1/2 teaspoon of Thyme 2 Bay leaves Enough water to cover chicken salt and pepper 2 cups of milk 2 1/2 cups of bisquick 1/2 cup of frozen peas
Put leftover chicken(with extra breasts cut into bit size pieces if needed) in pot with cut up carrots, celery, onion, salt, pepper, bay leaves and thyme and boil for 1 hour. Remove chicken carcass and strip off remaining meat- return to pot. Discard bones and skin. Use only as much as you need for dinner- one cup, two or three and transfer to second pot. add 1/4 cup of milk and 1/2 cup bisquick(already blended) to soup mixture- simmer to thicken Add frozen peas++++ Combine 2/3 cups of milk and 2 cups of bisquick in a bowl- stir until soft pastry type dough forms- should be very sticky. Drop with fingers on top of chicken mixture and cover for about 10-12 mixture or until dumplings are done.
Season with pepper and thyme.
