Kale/chard/dark greens eaters...
I was told that I need to start eating a minimum of two dark greens daily in addition to salads but I've never really been a dark greens eater. How do you prepare your greens, especially in the summer when you don't want anything too heavy or hot? Thanks!

Kale/chard/dark greens eaters...
I do a quick cook in garlic, a small pinch of salt and evoo
I have also steamed them and then dressed them with fresh lemon juice and evoo.
I'm not a big fan, but my dh is.

I did a bacon and kale quiche that got raves from my coworkers. I've also done chard fritters that were really yummy. Neither are the healthiest preparations but they're different and delicious. There's also lots of great soup recipes but that's probably not the best option for summer.

I sautee it kale with a little cooking spray, salt and pepper!
I have been making these zucchini fritters (really great healthy recipe) and I bet the Kale would work great!
Also you can make kale chips!

I do this, but with soy sauce and balsamic vinegar instead of salt. Mmm...
Kale chips are great.
Or steamed with a sprinkle of dressing.
I could eat kale every day! Collard greens are great, too.

Wash kale and break from stalk into bite size pieces. Drizzle lightly with some EVOO and sprinkle with some salt and garlic powder if you want.
Toss and spread out onto a cookie sheet, bake in 350 degree oven for about 20 minutes (I prefer mine more crispy)

Kale: soak them in water and salt for at least 2 hours. Then I saute them in olive oil and chopped garlic with salt and fresh black pepper. I sometimes add tomato for color. Goes great with grilled or saute tilapia
Chard: Never had
Collards: Soak them in water and salt for at least 2 hours. I cook them in chicken or vegetable broth with smoked turkey wings(for flavor remove them prior to serving unless you want to eat them).

This is more of a breakfast thing but good way to get at least one serving in. I have been doing Green smoothies (if you search the internet for “green smoothie” or “green monster smoothie” you will find tons of recipes). I typically combine 1 banana, and 1.5 other fruit servings with ½ C. unsweetened vanilla almond milk and 2 big handfuls of greens (kale, spinach, etc.), all in the blender, along with some ice. It ends up tasting mostly like fruit and it’s a good way to get in some extra leafy veggies! There are pretty much unlimited combinations. The only thing I would say is that if you use kale or a green with a stronger flavor, use stronger flavored fruit. The spinach really gets easily covered up by any fruit. I drink about 2/3 of the smoothie for breakfast on the way to work, and the rest in the late afternoon as a pre-workout snack!
