The recipe in Good Eats says to bake for 2 hours and set in oven for 90 minutes. Those are the only changes I make. Also, make sure ingredients are at room temperature before you start.

My family has been making Dinah Shores cheesecake recipe fo 30 years. Always a turns out great. Search on cooks.com for Dinah shore cheesecake.
