anyone have a gnocchi recipe???????

bf loves gnocchi (italian potato dumplings) want to surprise him and make it for him.. any good recipes???

Potato Gnocchi (serves 4)


5 baking potatoes

2 egg yolks
1/4 tsp. salt
1/4 tsp. grated nutmeg
1/2 cup grated Parmesan cheese
1-1/2 cups all- purpose flour


Bake the potatoes in a 350-degree F. oven for 1 hour. Peel and mash them.

In a bowl, combine the egg yolks, salt, nutmeg, and parmesan cheese.

Add the mashed potatoes.

Add the flour, a little at a time, until a dough forms and holds together.

(The dough should be soft but firm enough to roll. )

Dust the work surface lightly with flour.
Divide the dough into 2 or more parts and shape each into a sausage-like roll about 1 inch in diameter. Cut the roll into pieces 3/4 inch long.

To shape the gnocchi, hold a fork with the concave (top-side) facing you.

With the index finger of your other hand, press the dough piece just below the top of the fork. Pull down toward the fork's handle and allow the dough to roll over on itself.

The pieces should have ridges on one side formed by the tines of the fork and a depression on the other formed by your finger. *


Place the formed gnocchi on a lightly floured surface.

Cook the gnocchi in boiling, salted water 2-3 minutes or until they float to the surface.

Remove and mix gently with your desired sauce.

I haven't made either of these, but these are my two favorite chefs on food network and I make a lot of their dishes and they're always great!

I would go to a good Italian food store like Ivarone bros. (sp?) and buy them already homemade. It's one of my favorites.

i would never want to make them from scratch!~~- would definately buy from an Italian deli- I am talking about any recipes to go with them?

what about making a simple homemade marinara sauce to go with them...

crushed tomatoes
evoo
garlic
basil

and top with fresh grated parm cheese?

i've had them this way and with gnocci i think simple is best...

oh and i had them at a place with maranara sauce and then there was also little bits of fresh mozzerella mixed in so sometimes you'd get a bite of that not realizing it wasn't the gnocci since they look so similar and it was very yum!

Gnocci with Gorgonzola Sauce

INGREDIENTS:
1 1/2 cups dry white wine
1 1/4 cups heavy cream
2 tablespoons grated Parmesan cheese
4 ounces Gorgonzola cheese, crumbled
1 pinch ground nutmeg
black pepper to taste

DIRECTIONS:
In medium saucepan, cook white wine over high heat until reduced by half. Add cream, reduce heat, and cook until reduced by one-third. Add parmesan, gorgonzola and nutmeg. Stir until cheeses melt and sauce is creamy.
