Favorite thing to BBQ or summer dish
Now that summer is finally here, what is your favorite BBQ/summer meal? I'm looking for some new ideas ;)

Marinated portabellos!
I gently clean a bunch of them and marinate them overnight in the fridge...I use some olive oil, balsamic vinegar, fresh pepper, and basil and oregano from my garden. I toss in some slices of red pepper as well. Grill them up, and just before they're done, put a little bit of mozarella cheese on it if you want and let it melt.
So good.
Foil packets of vegetables, which I've described in this thread
Slices of pineapple and BBQ sauce, following the foil method above is a-mah-zing.

Cucumber salad. The vinegar kind. I could eat it everyday in the summer.

Favorite thing to BBQ or summer dish
Grilled eggplant parmigiana.
Peel an eggplant, slice it like you would for traditional eggplant parm, throw in a bag, coat all pieces with marinara or vodka sauce.
Place eggplant on grill, cook a few minutes on each side. Spoon a little more of your sauce on each piece, sprinkle with mozzarella. Delicious and way healthier.

Zucchini & asparagus are fave veggies to grill with evoo, kosher salt, pepper and sometimes garlic powder.
Love cucumber salad (with red onions, water, white vinegar and sugar) basically like pickled cucumbers.
Salad with goat cheese and beets or craisins with Blush wine vinaigrette (Brianna's).

i had some friends over saturday night and threw a bunch of lobsters on the grill. i had the market kill them. soo easy and absolutely delishhhh!! literally didnt have to do anything other than plop them on the grill
also love making roasted veggies. i have a grill wok where i throw sliced eggplant, radiccio, zucchini. mushrooms, broccolli, mini peppers.. basically any veggie.. drizzle with olive oil and sprinkle salt pepper oregano and garlic pwder.

everything i've read has made me hungry!
my favorite is grilled veggies. i'll slice up eggplant, every color of bell pepper, onions, squash, zucchini. you can add other veggies, but this combo is my favorite. throw them in a big bowl, drizzle a bit of evoo, salt, pepper, italian seasoning. and then grill until everything is nice and tender. i throw this stuff on everything
i make a big batch and then use this for sandwiches, on salads, as a side, as an entree, i just love this stuff!

one of my new favorite things is a turkey burger with a slice of grilled pineapple, thin sliced vidalia, and an asian bbq sauce on a potato bun.

Love to BBQ fresh sausage from the Italian deli and steaks.
I make a lot of cold pasta salad w/ fresh mozzarella and panzanella salad in the summer. Love.

One more: BBQ'd tofu!
I drain and press a block of extra-firm tofu overnight...in the morning, cut slices that are about 1/4" thick and brush BBQ sauce on them...leave in the container in the fridge all day so the sauce soaks in.
Grill them up, throw some pickles and pickled peppers on it...or put on a bun with some (homemade, not too mayo-y) coleslaw.
Delish!
Also, leftover pizza tossed on the grill is the bomb.

Flank steak
Broccoli - I drizzle olive oil and an anchovy butter sauce over it and then toss it on the grill for a few minutes until the tips are crispy.

We like to buy fresh clams, throw them on the grill until they pop open, and then have them with fresh lemon, cocktail sauce, horseradish, butter. With corn on the cob, fresh salad, and a crisp white wine, it's like a clambake in our own backyard. And something you wouldn't necessarily make in the winter (or it would be more of a pain to steam in a huge pot, etc.)!
