Yummy meals that you can freeze- especially vegetarian
A good friend was recently diagnosed with breast cancer and I'd like to get some meals together for her when she starts her chemo. She is a vegetarian but her DH and Lo's are not so I'd like some of each. Any ideas? Also is there anything else I can do food wise that you think would be helpful (besides gift cards to local places)?

Yummy meals that you can freeze- especially vegetarian
lasagna with roasted veg (especially chopped up roasted mushrooms, gives it a meat-like quality for the meat eaters), or baked ziti with veg mixed in. mac n cheese.
i've made a veg enchilada casserole - basically like lasagna with corn tortillas for the noodles, enchilada sauce for tomato sauce, refried beans instead of ricotta, sauteed diced veg.
maybe make some veggie or black bean burgers to freeze?
you can also make some tomato sauce (with or without meat) and then night of they can just cook up some pasta easily. also make a meatloaf, or cook up taco meat.
i make a crock pot shredded bbq chicken that is really good - a can of crushed tomatoes, a bunch of franks hot sauce, molasses, liquid smoke, jarred bbq sauce, spices, onions, red peppers, and 1 lb each boneless skinless chicken breasts and thighs.
eta: soups are nice too, and pretty easy. you can make hearty soups like minestrone or potato leek, and also chili (with or without meat)
