I always get compliments on my lasagna when I make it, and I'm not even Italian, except by marriage.

An Italian friend of mine says it reminds her of her grandmother's, growing up in Brooklyn.

I also just enjoy taking my time to make a good sauce on a cold Sunday morning.

I always use the noodles that cook in the oven. And often jarred sauce as a base. Chat Icon

I made a pan for my neighbor when he moved back in after the hurricane (also an Italian Chat Icon ) and he came over and said it was the best lasagna he ever ate in his life.

I'm 100% Italian so I make lots of yummy Italian dishes. Manicotti, baked ziti, etc.

I make great sauce!!!! I think I would be shunned by my family if I didn't have my sauce down. Chat Icon Never, ever jar sauce. Ick.

One of my favorites is sausage and peppers. I make kick ass sausage and peppers. To die for yummy.

American Italian - Spaghetti and Meatballs.


Italy Italian - real carbonara. Not the one made with cream, but the one with eggs. Love it. I have made it only a couple of times.

I make a really good pasta bolognese.



here is what I do when I don't have all day to make a sauce.

2 cups whole, peeled, canned san marzano tomatoes, chopped, with their juices (about one 28-oz. can)
5 Tbsp. unsalted butter
1 medium yellow onion, peeled and cut in half
Salt, to taste

Combine the tomatoes, their juices, the butter, and the onion halves in a medium saucepan. Add a pinch or two of salt. Place over medium heat and bring to a simmer. Cook, uncovered, at a very slow but steady simmer, adjusting the heat as necessary, for about 45 minutes, or until droplets of fat float free from the tomato. Stir occasionally, mashing any large pieces of tomato with the back of a wooden spoon. Taste and salt as needed.

Discard the onion before tossing the sauce with pasta.

Yield: Enough sauce for about 1 pound of pasta, or 4 servings




Here is what I do when I have all day to let it simmer.


1 28oz can san marzanos
1 15oz can tomato sauce
1 sm. can tomato paste
15oz water
crushed garlic
1/2 onion finely chopped
1-2 tablespoons evoo
fresh basil chopped
fresh parsly chopped
italian seasoning (I didn't realize I was out of dried oregano)
1-2 tablespoon sugar
1/2-1 teaspoon baking soda
crushed red pepper to taste
3 links of italian sausage removed from casing
fresh or frozen italian meatballs

I have used my slow cooker insert on the stove top and then set it to cook for 7 hours in the slow cooker. Or you can let it simmer on top of the stove for a few hours.

Pour the tomato puree, water and tomato paste into a large stockpot. Add in the red pepper flakes, basil, oregano and sugar, then stir to combine. Bring to a boil over high heat. When the sauce reaches a boil, lower the heat to medium, and slowly add in the baking soda. (Don’t add it too fast, or the sauce will boil over).

After you’ve started the sauce, add the onion, garlic and oil to a frying pan. Sautee over medium heat until the onions are translucent and the garlic is fragrent. Add the onion and garlic to the sauce. I also added the sausage uncooked at this time. And the meatballs. Brown the meatballs first if they are homemade. If frozen just toss them in. I then transferred the pot from the stove top to the slow cooker. Set it to low. I cooked it for 7 hours. I would do at least 5 hours. I stirred it occasionaly. I dunno if you need to with the slow cooker though.

my fav. is italian dish is gnocchi, yum!

for my sauce i usually brown chopped onions in olive oil in a large pot, and then add a can of tomato puree and a can of crushed tomatoes, a bit of water, then i add italian seasoning and a bit of red pepper flakes, put the lid on and simmer on low for an hour or so, stirring every now and then. i usually have leftover sauce for another day as well.

my favorite to make is penne alla vodka and eggplant parm.
my favorite to order at a pizza place is pizza, baked ziti, garlic bread, italian salad.
my favorite to order at an italian restaurant is probably ravioli (all different kinds), penne alla vodka, and baked ziti.

Yes, I love it with just a little red sauce. I just add a small can of tomato sauce. I posted the recipe once, I can bump it for you if I find it.
