(Healthi-esh) Slow cooker meals!

I just started using my slow cooker this week and feel like it's the most fabulous invention for the FTWM.

Yesterday I just threw in a couple of steaks, carrots, potatoes, seasoned the meat and put in some steak sauce. It came out like a pot roast, super moist and tender.

Today I threw in chicken with a little salt and pepper, a can of corn, a can of black beans and a jar of regular salsa.

I ate it on a couple corn tortillas with a bit of grated cheddar; DH just had his like a chili. SO GOOD!

Tomorrow I'm planning to do either a BBQ or teriyaki pork with sweet potatoes.

What are your fave recipes?

(I'm too lazy to look on Pinterest right now and I also would like to try to avoid a lot of majorly processed sauces and such).

I stay away from all the overly processed stuff too. I make mostly soups (split pea, taco, Italian, lentil), chilis, stew/stoup, pulled pork, roasted chicken, I'll cook meatballs in sauce too.

I only use lean meats because there is no place for the fat to go.

Someone on this website recommended the book Fix it and Forget It Lightly. I borrowed it from the library and have tried MANY recipes. They are all low fat and every one that I have had was delish!

I made this a few nights ago and it was the first crockpot chicken I've liked in a long time. It was a little extra work than I usually do for a crockpot recipe but it came out awesome! Moroccon Chicken

Made this twice already! I use the sutton and dodge refrigerated meatballs from target and they're really good. All beef and not a lot of ingredeints but you could make your own too.
Spaghetti squash and meatballs

This one was good too with a little shredded cheese on top.

i make this with a half block of low fat cream cheese and it takes it to another level! soooooo good!!

Thanks ladies.

I think my pork was on too long today because the sweet potatoes basically disintegrated into the sauce.

Will need to save that one for when I'm home to monitor it.

I use my crock pot about 2x a week, and for the most part it's always a hit. These are my DH's favorites


chicken noodle soup (chicken broth, soup greens, 1 medium potato chopped, 2 carrots chopped, chicken breast, and egg noodles),

Hawaiian Pulled Pork (pork chops, 1 bottle of BBQ sauce, 1 can of pineapple slices with juice, 1 tablespoon of honey). Serve on a potato roll with coleslaw


Creamy Cheesy Chicken (1 package of chicken tenders, 1 cup of water, 1 packet of ranch dressing mix, then 2 hours before it's done, throw in 1 package of cream cheese, 1 package of frozen broccoli). Serve over rice, or pasta.

Turkey Tenders with Orange-Cranberry Sauce (turkey breast tenders, 1/3 cup orange juice, 3/4 cup whole cranberry sauce, 2 tablespoons brown sugar, 1 tablespoon soy sauce. About 15 minutes before it's done, add 1 tablespoon of cornstarch dissolved in 1 tablespoon of cold water). Serve over rice or with quinoa.

love my slowcooker...especially for chili, soups, stews. I use a regular recipe and adjust slightly if needed for the slowcooker. I also like chicken salsa like pp mentioned, chicken with veggies, beans and diced tomatoes, i made meatballs in it that came out great also! Tonight I'm trying bolognese sauce - hoping it comes out good! For the most part i follow a regular recipe and let it cook on low for 6 - 8 hours depending on the type of meat. Thick chicken breasts, stew meat, roasts tend to cook the best. I have also made a whole chicken in the crockpot that came out good also - just the skin doesn't get crispy.

I have to thank the OP- I made the chicken chili recipe you posted, and WOW it was delicious! I even threw in a packet of taco seasoning that I had from tacos one night, and it added a nice kick. I was able to freeze the rest for dinners throughout the month. Thanks!

You've inspired me to dig my crockpot out of the basement. I've been using my dutch oven so much I forgot all about my crockpot. My favorite easy meal is chicken sausage, cut up peppers (about 3) and a jar of sauce. I cut up the sausage and serve it on a roll.

I like to cook a nice roast beef with potatoes and veggies, I season everything and just put beef stock in it.

I recently started using my crockpot and loveeeee it! Def the best invention ever! I've been making the freezer meals and make about a month's worth at a time. Our favorites so far have been bbq spare ribs, French dip sandwiches, black bean and corn salsa chicken (such a hit!!!! We shredded chicken and made tacos one night, fajitas the next, and chipotle-style burrito bowls the last!). Here are the recipes.

Slow Cooker BBQ Spareribs
Ingredients:
1-2 lbs of country-style pork ribs
1 1/2 cups ketchup
1 1/2 Tablespoons seasoned salt
1/2 teaspoon liquid smoke
1/2 cup brown sugar
1/2 cup white vinegar
Directions:
Place pork in resealable gallon-sized freezer bag. Mix remaining ingredients together in a bowl and pour over pork. Mix together in bag and zip closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on HIGH for 3-4 hours or LOW for 6-7 hours.

French Dip Sandwiches
Ingredients:
2-3 lb beef chuck roast
2 cans (14.5 oz each) beef consomme (it is right next to the soups and beef broth)
6-8 hoagie buns
Directions:
Place roast in a resealable gallon-sized freezer bag and pour beef consomme on top.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8-11 hours (or HIGH for 5-7 hours). Remove roast from slow cooker and save extra juice for dipping! With 2 forks, shred roast and serve meat on buns.

Slow Cooker Black Bean and Corn Salsa Chicken
Ingredients:
2 (14 oz) cans black beans, drained and rinsed
2 (14 oz) cans corn, drained
1 (1 oz) package taco seasoning
4-5 chicken breasts (mine were frozen)
1 cup salsa
3/4 cup water
Directions:
Place all ingredients in resealable gallon-sized freezer bag. Mix together in bag and zip closed.
When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on HIGH for 3-4 hours or LOW for 7-8 hours.
When finished cooking, shred chicken and serve over rice, with tortilla chips, over a salad, in tortilla shells, or wrapped in a soft tortilla (this meat is so versatile). Garnish with cheese, sour cream, avocado, lettuce, tomato, and hot sauce.
