What would you make with these ingredients
Eggplant
Marinara sauce
Store bought Roast chicken
Jarred roasted peppers
Mozz cheese

Eggplant parm.
Chicken soup if you have onion carrots celery.

I'd probably leave the chicken out because I can't seem to figure out where to put it...
I have been wanting to try this recipe:
Eggplant Meatballs
I'd serve them with marinara sauce and melted mozzarella on top. You could also add in the chicken to the meatballs and make bigger meatballs, but I'm not sure how that would work.

What would you make with these ingredients
If you want to use everything you can do a baked dish with cubed eggplant, cubed chicken, roasted peppers and then the sauce with cheese. I'd probably go lighter on the sauce maybe adding a little cream to it.
ETA if you do have pasta toss it in for a pasta bake
