Fish dish that holds up well
I want to make some kind of fish dish for Christmas Eve. It needs to hold up well and travel well, as DHs aunt lives about a half hour from us. Maybe mussels?

I make baked clams a lot... Can be made in advance, and the filling is fully cooked. when I've brought them anywhere, I usually bring a container of the filling, a little container of grated parm, and the foil shells, and then assemble when I get there by spooning filling into the shells and topping with a little parm. Bake at 350 degrees for 25-30 mins.
The filling is 4 garlic cloves, minced, 2 TB minced onion, and 2 tsps fresh chopped parsley sautéed in 6 TB olive oil until soft/translucent. Take off heat and stir in 1 cup dried breadcrumbs, 3 cans (6.5 oz each) chopped clams with juice (drain one can, add juice from other two), squeeze of fresh lemon and salt to taste.
This is easy and always a crowd pleaser. It can also be a dip, baked on a baking dish and served with crackers, veggies, etc.
If you don't want to use the oven, I also make a cold marinated shrimp with lemon, olive oil, garlic, fresh parsley, etc. I think I found the recipe on Eating Well (if you googke cold marinated lemon garlic shrimp, it should pop up), but I also add grated lemon zest to amp it up a bit. You can make it a head of time and store it in the fridge. Can be an appetizer (alternative to shrimp cocktail) or a salad (it's nice over lettuce or plain).

I think baked clams would be easiest I would also do a cold seafood salad (scallops, calamari, shrimp, crab meat, red onion, celery, parsley etc with oil/vinegar dressing )

My BIL is going to do baked clams. After searching round and poking at recipes, I think I'm going to do a seafood chowder and keep it in a crockpot. I'm going to do a test run tomorrow. If it's good, that's what I'm going with.
