Baking Eggplant vs. Frying
Anyone bake their eggplant instead of frying it? I usually dip it in flour then egg then fry it. My. DS can only have baked eggs due to allergies. How does it come out? Do you line the baking sheet with parchment paper?

It comes out pretty good. I bread it the same way I would if I were to fry it. I just drizzle a little olive oil on the baking sheet and a tiny bit on top to crisp it up a bit.

I've baked them too and it comes out really good. I just use a Pyrex baking dish put a little oil on the bottom and bake then I would flip over to crisp other side.

Baking Eggplant vs. Frying
We bake it without egg or bread crumbs on parchment and it comes out really good.
