Veggie side dishes?
I need to get more creative with my veggie sides, I'm constantly throwing microwaved frozen peas/broccoli/etc. at my family
What are you serving with your main dishes to get more veggies into your family members?

I suggest you start just experimenting and buying veggies of different colors and textures. We eat it all:
Steam or roast beets with nothing on it
leafy greens sauteed with evoo garlic salt pepper
string beans with almonds
in the cold months i roast broccoli, cauliflower, brussel sprouts and winter squashes.
Raw veggies as a side are a staple (cuc, carrots, peppers, tomatoes)
sweet potatoes baked

So far this week I've done roasted Brussels with olive oil, salt, pepper, and a splash of apple cider vinegar, roasted broccoli with garlic, breadcrumbs, cheese, and oil, roasted acorn squash (sliced, roasted and sprinkled with parm at end), and chunks of sweet potatoes roasted with oil, thyme, and salt. We try to eat seasonally, so it's a lot of squash, cabbage, Brussels, greens, this time of year.

Veggie side dishes?
I like to cut up bacon into small pieces and cook it. Then add fresh brussel sprouts cut in half with a little salt and pepper and a splash olive oil. Stir around to coat, cover and cook on low for a few minutes until the brussel sprouts are nice and green. That's all i got.....everything else is frozen :/

Veggie side dishes?
Our favorite is broiled asparagus seasoned with salt and pepper.
I also like to boil broccoli or cauliflower and top with some Parmesan cheese.
Salads with carrots, red peppers, tomatoes and cucumbers are another favorite, either as a side or topped with grilled chicken as an entree.

I like to sautée zucchini, broccoli and mushroom with garlic. I also really like cauliflower mash. Steamed broccoli and green beans are go-tos around here. And roasted brussel sprouts are my personal favorite, though the rest of the house can take them or leave them.

I boil sliced carrots and parsnips and then mash them with a hand masher (so they're not smooth, really)...top them with a little butter.
Roasted vegetables are awesome.
Baked sweet potatoes as a side.
Fresh spinach sautéed in olive oil with some garlic.
Brussels sprouts - roasted, or shredded and sautéed, or steamed.
Steamed asparagus.

Roast them!!!! I just discovered roasted broccoli and DS loves it. I also like sautéed spinach, roasted string beans, and grilled zucchini.
