A dish that would make DH consider going vegan!

I had to share because tonight, DH commented that he loved my roasted root veggies so much that he'd consider being a vegan just to have them more often.

While it's a bit extreme for him to say this, they are good esp. in winter. In March of 2008? a tree fell on our house/neighbors and the power went out for days. I had the only gas stove around that could light with a pilot light (1964 stove). Our elderly vegetarian neighbors were both off their feet at the time and I made this for them with veggies from both our refrigerators.

In a big roasting pan coated with olive oil:
Parsnips, sweet potatoes (peeled), red and golden beets, carrots, turnips, red onions and fingerling potatoes. I cut them into large chunks to cook them evenly, leaving the sweet potatoes largest. I add fresh or dried savory herbs, some onion powder, salt pepper and parsley. More oil, stir to coat.

Roast at 400 for about an hour.

This sounds so delicious, but was this your main dish or a side dish. I can't imagine both me and DH just eating this as a main dish! I wish we could eat JUST that!

Lol, we ate it with Dijon Rosemary baked pork chops and a Caesar salad. So much for vegan...

We love roasted veggies. Wish I could get DH to eat a larger variety, our mix usually eggplang, zucchini, onions, garlic cloves, carrots, mushrooms and sometimes plum tomatoes.
I roast cherry tomatoes separately with rosemary and thyme to make a topping for chicken or fish.

LOL yes, I was going to say, sounds like a good side dish- for some kind of meat!

Dumb question of the day: When you say "savory herbs"... do you mean the one actually called Savory?

Or do you mix up a bunch of herbs together? If it's this, what sort of mix do you use?

I use fresh or dried herbs. Thyme, rosemary, sage, majoram and parsley. I'm not sure what savory is (in the picture)
I grow some in the summer and dry them, but if I run out I always buy them fresh and dry them out next to the boiler, lol.
McCormick also makes a dried ground mixture called poultry seasoning that's pretty good. Similar to Bell's turkey seasoning.

Btw if it snows Saturday I'm doing these. I was thinking of carving the round veggies into hearts.
I found Japanese yams and golden sweet potatoes so I'm excited to use them.
