Chorizo recipes?

Does anyone have any good recipies that use chorizo?

I had this made for me at a dinner party once and I went home and made it because it was so good and quite easy. The measurements are metric, but quite easy to convert....

I just slice it up, and either grill on the BBQ or in a pan and add a little wine....soak it all up with crusty bread...yummmmmm!!

Also you can use chorizo in omelets, or with green beans, in rice...

A tex-mex breakfast can consist of scramble eggs and Chorizo (optional-Cheddar cheese on top.) Serve by itself or Texans like to make breakfast tacos. Of course, I don't eat scrambled egg. So I never tried it but I have cooked it for others! LOL From what I have heard, it is yummy.

Another idea is Chorizo con papa (potatoes)
Ingredients:
Chorizo
1 Large Potatoe, cut into small cubes
6 Eggs (beaten)
1 Small onion, diced(optional)
Flour Tortillas

Cook chorizo (remove from casing). ONce cooked remove from pan and drain. Leave a little oil in the pan.

With the reserve oil, fry up the cubed onion and potatoe (just enough for a little crisp on the outside) Add in eggs and chorizo.

Served alone or as a taco.

ETA: Since I don't like egg, I have made the chorizo con papas and cheese by itself. It is so yummy!
