Tell me how not to )(*&)( up my turkey
Last year was my first year hosting thanksgiving. I bought a big beautiful turkey, brined it, stuffed it and cooked it. The popup thermometer popped, I used a meat thermomter and it appeared done. I took it out and the breast was done, juicy and delicious. The dark meat was raw...it never got served. The amount of rawness would likely have required another good 45 minutes further cookingtime which was well over what the per lb cooking guidelines said and the popup indicated. Is it the fact that I stuffed it? How do I not screw it up this year? I am getting a 22-24lb turkey from Fairway (brined) and am petrified

Last year was my first year cooking the turkey all by myself. I followed the directions on the Butterball website and it came out perfect.

salt pepper oregano paprika and olive oil with some water. i throw in halved lemons and onions inside the bird and thats it. i use the big black and tiny white dots roasting pan with a lid. turkey always comes out great
i do want to try to use butter instead of oil this year and cook it on a roasting rack instead. my goal is to get double the amount of crispy skin

Turkey is just too scary to me and I do like to cook. The one time I hosted I catered it. (did all the sides myself) Too much can go wrong. I hear ya!

You may have over-stuffed the turkey. You need to leave a little space in the cavity to let the heat circulate. You could cook it for a few hours and then stuff the cavity. I've done that it came out just fine.

Was it a frozen turkey? If so, you can't just pop it in the fridge the day before--it needs several days to defrost. I learned that the hard way years ago on Christmas Day with a $$$ prime rib

yes....maybe this. I did try to cram all the stuffing in. So I should cook the turkey partway first? Wont it be hard to stuff a burning hot turkey?

Just be careful, lol! I use a long-handled spoon to add the stuffing. You should never cram or pack the stuffing in a raw turkey, the stuffing itself can harbor bacteria from an undercooked turkey. It's okay to stuff it pre-cooked but never pack it in.
