If you are hosting Thanksgiving, what can/do you make ahead?

What sides do you make ahead for thanksgiving and how do you store them? Freeze, refrigerator?

Trying to figure out how to pull this all off!

A few days before I make the cranberry relish/sauce.

I always make Pioneer Woman's mashed potatoes the day before. I would never want to be peeling potatoes the day of. Put a few pats of butter on top and cover with foil and refrigerate. Next day take it out about an hour or more before then heat in the oven with foil on until the last 20 or so minutes, then take foil off to finish. Comes out perfectly.

The night before I also make:

Sweet potato casserole (minus the marshmallows until the last few minutes of baking time) Foil on top & refrigerate.

Sausage and/or regular stuffing. Foil on top & refrigerate.

This year I will do the same with cauliflower mash & probably creamed spinach.

On Tuesday I will make the sausage stuffing. I might prep the celery and onions on Monday. Just have to reheat with a little stock on Thursday.

I usually bake items a few days ahead, such as brownies, pies and cookies.

I usually prep all vegetables, except potatoes ahead of time.

We cut all the veggies the night before and store in fridge in zip locks or tupperware. If there are herbs/butter or some type of sauce they need to be cooked in, we store in separate container which is labeled with cooking time and temp and what it needs to be combined with. Onions, celery are chopped in large amounts. We usually cook it the morning of and just do a quick reheat right before we eat. The only thing we do from scratch the first day is the potatoes and the Turkeys

The day before I make: stuffing, twice baked potatoes, corn casserole, desserts, prep veggies, cranberry sauce. I also set the table on Wednesday and get all my platters ready.

Common to what everyone else is saying, when I host...
-I do all the cleaning a few days before. and start decorating if I am doing that.
-I gather all of my recipes and make myself a menu/tentative timeline so I don't forget any of my dishes.
-I make sure all the desserts are made in advance, cookies, pies, whatever.
-I'll do things like the cranberry sauces ahead of time and sweet potato casserole (except leave the marshmallows for day of).
-I also prep all of my vegetables beforehand.
-The night before I do touch-up cleaning and arrange the furniture/set the table.
-Day of, wake up super early and just start cooking everything. You need to figure out how much goes in the oven at what temps and how you can do all of it last minute. That is the hardest part figuring out what to put in the oven and when. It is best when everything cooks at the same temp so you can pop things in and out constantly.

just read the recipe. I want to make it to make my life easier. Do you taste the cream cheese? I don't want to taste it!!!

Also do you have a good sausage stuffing recipe?

Cranberries can be done ahead of time.

I also do the stuffing components (saute the veg, cube and stale the bread) ahead of time. And then assemble day of.

You can also prep the veggies (such as trimming green beans, cutting up brussel sprouts, etc).

If you are making a sweet potato casserole, you can do that ahead too. if you add marshmallows, just add the marshmallows when you are reheating it.

Herb garnishes can be chopped.

All baked goods.

I just made the cornbread for my cornbread stuffing. Tomorrow I will make/assemble the sausage stuffing (and warm it up on Thanksgiving. I'm also going to cut up all the veggies and set the table.
