Muffins? Will they stay fresh?
I want to make muffins for Christmas Day. So, Friday, right? If I make them tomorrow, Wed. morning... will they still be fresh for Friday?

If you keep them in an airtight container- like a larger tupperware, I would think they'd be fine

I find substituting apple sauce for oil also helps keep it moist longer. And is healthier!

True or pumpkin!
Sounds odd but DH makes these muffins that use devil food cake mix and a cup of pumpkin. You don't taste the pumpkin at all, but man are those things moist!

yes, they will. You can always throw them in the freezer until Friday AM

I won't have access to a freezer or a kitchen on Thursday, which is why I need to make them Wednesday for Friday! But don't want to go through the effort if it would be worthless. I guess I will give it a shot!

the muffins will be fine and will still be fresh. Don't worry, they sound delicious as well.
