Lemon Chicken Recipe
Ok, last night I found and made this BUT I think there must be something missing. The directions say to stir the mixture...hello??? There is a total of 4 tablespoons of liquid... there was no mixture to stir!
The chicken kind of burned and it was not a total disaster but not tasty and I was disappointed.
Anyone have a better recipe? Or suggest what I did wrong??

8 boneless skinless chicken breast halves (2 1/2 pounds) 1 teaspoon lemon pepper 1 tablespoon vegetable oil 3 tablespoons lemon juice 1 teaspoon grated lemon peel 1/4 cup chopped toasted pistachio nuts, if desired Lemon slice, if desired
1. Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper. Sprinkle both sides of chicken with lemon pepper. 2. Heat oil in 12-inch skillet over medium-high heat. Cook chicken, lemon juice and lemon peel in oil 15 to 20 minutes, turning chicken once and stirring juice mixture occasionally, until juice of chicken is no longer pink when centers of thickest pieces are cut. 3. Serve chicken topped with juice mixture, nuts and lemon slices.

Personally I would only add lemon at the very end or on top right before serving. I find cooking lemon turns it bitter ...

Grrek Lemon Chicken.....Totally Yummy
4 Chicken Breasts (bnls, sknls) Juice from 2 or 3 lemons ( I do 3, we like lemon) (to juice I roll the lemon on the counter and apply pressure, it makes to juice come right out) 1t lemon Zest (just grate off the lemon peel) (or you can buy lemon zest by the spices) about 1/3C olive oil Pepper and salt to taste 3 cloves garlic (less or more depending how much you love garlic, I usually do 4) 1t oregano (again more or less depending) Mix all the above and pour over Chicken (put in fridge over night or at least an hour or two) Cut up about 4-6 baby reds potatoes (in quarters), mushrooms (5-6) (in half), 1/2 red onion (huge slices),1/2 a red pepper (strips).
Add all together, dump marinade ove top of all ingredients. Bake at 350 for about 1 hour, I usually make up some sort of rice and a salad (usually caeser). My family begs me make this if it has been a while since we've had it. We re having it in a couple of days infact!!! It seems like alot of steps but it really isnt.
edited to specify some things and it is oregano not basil...sorry I was jotting by memory, I just toss it together now, but I was getting dinner reay for tonight and remembered I was wrong. Sorry I a ditz.

That sounds delicious! But what are baby reds??? And how do you get the lemon zest?
ETA: Thank you. When you put it in the fridge? Do you put it ziploc bags to marinate?

I just usually put it in a container, but ziploc is fine.
