Menu thread 2-21
DH and I are trying to low carb it a bit:
Tonight- Homemade chicken soup (with noodles for kids, noodle-less with extra chicken for us!)
Mon.- Greek style stuffed peppers
Tues.- Shredded pork tacos ( lettuce wraps) with guacamole and refried beans
Wed.-Grilled chicken w/ arugula salad
Thurs.- leftovers
Fri.- take out

Sunday: turkey soup and toast home sick. Not sure about the rest of the week. I will see what others are making for ideas

Tuesday's always turkey tacos cuz my five year old loves it
Rest of the week I was hoping to get ideas. Maybe sausages and peppers for weds. Chicken something Thursday

Sunday: Chicken sausage and peppers stuffed zucchini Monday: quinoa stuffed peppers Tuesday: quinoa chicken enchilada bake Wednesday: turkey tacos with guacamole Thursday: left overs Friday: maybe breakfast for dinner..or pizza. But we are trying to low Carb it too so maybe not. Saturday: dinner and drinks gathering with friends

I'm trying to cut back on gluten again - I've been getting sick again lately. So, that means making 2 dinners most nights since DH and DS wont eat GF.
Sunday: We grilled burgers, hot dogs, chicken, homemade potato and pasta salads
Mon: Shells with tomatoes and mozzarella (leftover grilled chicken with veggies for me)
Tues: Steak with leftover pasta & potato salads
Wed: GF mushroom ravioli with sage brown butter sauce
Thurs: Leftovers
Fri: Spaghetti with sauce, meatballs, and sausage (GF breaded tilapia and roasted veggies for me)
Sat: No clue.

All my dinners are gf for dh. Some my girls eat and some they don't, especially my 3yo who's super picky and doesn't eat anything no matter what I make her!

Sunday - we had a late lunch so we just snacked on apples, cheese, hummus and crackers
Monday - vegan orange cauliflower and tofu, stir fried veggies, rice
Tuesday - pasta with veggies and meatless meatballs
Wednesday - quinoa some shit, I don't know yet
Thursday - soup and sandwiches
Friday - veggie burgers and fries
Saturday - no idea

I'd love your stuffed pepper recipe if you don't mind sharing.
Sure, but I don't have exact measurements for it. Here's the basic idea:
Ingredients
4 large bell peppers (any color)
1 1/2lb lean (at least 80%) ground beef
1/2 an onion chopped small
1/2 to 1 cup cooked rice (I use brown and may also try quinoa next time) I only use 1/2 a cup to bulk it up but you could use up to a cup
1 teaspoon or so kosher salt
1-2 clove garlic, finely chopped
1 can (15 oz) tomato sauce (more if you like it more saucy)
few dashes of worcestershire sauce
few dashes of cinnamon (this gives the sauce that greek flare) to taste
1/2 cup (or more) frozen peas
crumbled feta
Directions
1. Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes; rinse peppers. If necessary, cut thin slice from bottom of each pepper so they stand up straight. In 4-quart Dutch oven, add enough water to cover peppers. Heat to boiling; add peppers. Cook about 2 minutes; drain. (sometimes to soften these I just microwave them in a covered dish instead of bowling them)
2. In skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in cooked rice, salt, garlic and most of the tomato sauce; add cinnamon peas and worcestershire sauce. Cook until hot.
3 Heat oven to 350°F.
4 Stuff peppers with beef mixture. Stand peppers upright in ungreased 8-inch square glass baking dish. Pour remaining tomato sauce (can mix with a little water if necessary) over peppers.
5 Cover tightly with foil. Bake 10 minutes. Uncover sprinkle with feta cheese and bake about 15 minutes longer or until peppers are tender. If you'd rather, you can sprinkle with the feta before serving and not heat it with the cheese at all.
