Re: corned beef and cabbage
I just made this on Sunday and made a plate for my neighbors. Everyone said its the best they've ever had. It was amazing!
Preheat oven to 350 degrees. Add pepper and pickling spices on the meat. Add 1/2 inch or so of beef stock. Throw in the beef , some potatoes, carrots and onions. Put the lid on the roaster for 2.5 hours. Last 20-30 min uncover the pan. It should read 150-160 degrees. You'll know it's done when the fork goes right through.

I make mine in the crockpot, everything blends well and gets really soft. I just use the corned beef, cabbage, carrots, and red potatoes. I add a bottle of beer, and a little garlic. It comes out really good IMO.

Re: corned beef and cabbage
It came out great and was so easy and yummy. I bought a 2lb Frierich thin cut corned beef. I put about 5 quartered (not peeled) yukon gold potates in the bottom of the pot with 1 big quartered onion and half a bag of baby carrots. I put the beef on top, fat side up (it came preseasoned) and added half a beer and water. Cooked for 8 hours and it came out great. Served with rye bread and mustard.
Added a small cabbage quartered to the top for the last 1/2 hour.
