"Crack" cookies made with matzoh

Or saltines...
I bought matzoh and I want to make them. Does anyone have a great recipe?

I make this year round using saltines and for passover using matzoh. Everyone goes nuts for it.

Line a cookie sheet (one with sides) with foil going up the sides, then put parchment on the bottom. Cover with matzoh or saltines.

Melt 2 sticks butter and 1 c packed dark brown sugar together over medium heat until it begins to boil. Then let it bubble away for 3 more minutes. Make sure to keep stirring it. After 3 minutes, remove from heat and stir in a bunch of vanilla (I prob use 2 teaspoons) and a big pinch of sea salt. Then pour over matzoh/crackers and spread - make sure to do this quickly, because it will start to set pretty fast.

Put in a 350* oven and bake for 15 minutes. Remove from heat and immediately sprinkle 1 - 1.5 c bittersweet chocolate on top. Let sit for a couple minutes to melt the chocolate and then spread.

I then sprinkle another big pinch of sea salt on top, and also usually some sprinkles so that it looks pretty.

Once it has hardened (you can put the pan in the fridge to speed it up, if it will fit), break it up into pieces. I usually store it in the fridge.
