Foolproof cookie recipe for a non baker

Anyone have one? I am planning to make cookies as a thank you to give to someone. I plan to put the cookies in a nice gift box. I am thinking of making chocolate cookies but open to other types of cookies or brownies too. I don't have a stand mixer so I will need to hand mix the ingredients. Thanks!

These blondies are super easy and you definitely don't need a mixer. I've made them with and without nuts and they're always delicious. If you spray your pan well you should be able to turn them into a cutting board once they cool so you can cut them into nice clean pieces.

The nestle tollhouse cookies are always great. You should make the dough the day before and let it rest, it tastes better. I also spinkle the tops with sea salt before baking.

I've been making these Thick and Fudgy Brownie cookies for a few years. They are INSANELY good and very easy to make..............hard to screw them up!! Chat Icon

Thick and Fudgy Brownie Cookies

1/2 cup (1 stick) butter, softened at room temperature
2/3 cup brown sugar
1/3 cup granulated sugar
1 egg + 1 egg yolk
1 tsp. vanilla
1 1/2 cups flour
1/2 cup special dark cocoa powder - regular can be substituted, but special dark is
recommended to achieve a deep chocolate flavor
1/4 tsp. baking soda
1 tsp. salt
3 T. heavy cream - milk 2% or higher can be substituted,
but it may create some slightly different results
1 cup chocolate chips

Preheat the oven to 350º. Prepare a cookie sheet with parchment paper.

In a mixing bowl, cream together the butter and sugars. Add in the egg and egg yolk, along with the vanilla.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add half to the butter mixture. Pour in the 3 T. of cream, and mix until combined. Add the remaining dry ingredients and mix well. Fold in the chocolate chips.

Scoop approximately 2 T. of the dough on to the cookie sheet. Flatten to about 3/4 inch thickness. Leave 1-1/2 inches between each cookie. Bake for 9-11 minutes. The tops of the cookies should be puffy, rounded, and set. Let cool for a couple minutes on the pan before transferring off to cool completely.

Makes approx. 2 dozen (24) cookies
