Coleslaw recipes anyone??

I like it vinegary as opposed to mayonaisey....anyone??

The one on the back of the package of the Dole Cole Slaw mix is great. It's the one I've been using for BBQ's for years.

I have to second that recipe. DH makes it and it's fantastic! I will say that he does stray from the recipe but nonetheless, it's a good recipe as is.

I love this one from Rachel Ray. No mayo. If I'm feeling lazy I just use the prepared mix and leave the rest of the veggies out and it's still good.

Thai Slaw Salad:
1 (16 ounces) prepared shredded cabbage (coleslaw mix) from produce department
1/4 European seedless cucumber, sliced into thin sticks
1 small red bell pepper, seeded and thinly sliced
3 scallions, thinly sliced on bias
20 leaves fresh basil, shredded
Dressing:
1/2 teaspoon crushed red pepper flakes
1 clove garlic, minced
1/4 cup white distilled or rice wine vinegar
2 teaspoons sugar or 2 tablespoons honey
1 tablespoon soy sauce
2 tablespoons vegetable or canola oil
1 teaspoon toasted sesame oil
Garnish:
Toasted sesame seeds
Combine vegetables in a bowl. Combine dressing ingredients in a small plastic container and shake vigorously for 1 minute. Drizzle sauce over vegetables and toss to coat evenly. Let stand 10 minutes and re-toss before serving and garnish with toasted sesame seeds.
Yield: 5 to 6 servings

This is a Bobby Flat recipe and gets raves when I make it. Your classic, creamy coleslaw! (I use the preshredded cabbage)

1 head green cabbage, finely shredded
2 large carrots, finely shredded
3/4 cup best-quality mayonnaise
2 tablespoons sour cream
2 tablespoons grated Spanish onion
2 tablespoons sugar, or to taste
2 tablespoons white vinegar
1 tablespoon dry mustard
2 teaspoons celery salt
Salt and freshly ground pepper

Combine the shredded cabbage and carrots in a large bowl. Whisk together the mayonnaise, sour cream, onion, sugar, vinegar, mustard, celery salt, salt, and pepper in a medium bowl, and then add to the cabbage mixture. Mix well to combine and taste for seasoning; add more salt, pepper, or sugar if desired.

I make coleslaw regularly, I eyeball the whole thing, but I slice a cabbage on the madolin, grate a carrot and sometimes add some scallions. For my dressing I water down mayo, add grainy mustard, some lemon juice, some splenda, some raisins soaked in water and I mix it all up. Its one of my favorite things in the whole world to eat, and my husband likes it too!!!

I cut up cabbage - add some olive oil, fresh lemon juice, salt and pepper..let it sit overnight...done!

Horseradish Coleslaw Recipe courtesy Emeril Lagasse





5 cups shredded green cabbage
5 cups shredded red cabbage
2 cups shredded carrots
1/4 cup finely sliced green onions
2 Granny Smith apples, peeled, cored, and cut into 1/4-inch cubes
2 teaspoons fresh lemon juice
1/4 cup plus 1 tablespoon sugar
1/2 cup cider vinegar
1 1/2 teaspoons salt
1 teaspoon freshly ground black pepper
1 cup mayonnaise
1/4 cup sour cream
3 tablespoons freshly grated horseradish or 6 tablespoons prepared horseradish
1 tablespoon Creole mustard or other coarse-grained mustard

In a large mixing bowl, combine the green and red cabbages, carrots, and green onions. In a small bowl, toss the cubed apples with the lemon juice and add to the cabbage mixture.
In a small mixing bowl, combine the sugar, vinegar, salt, and pepper and whisk until the sugar is dissolved. Pour the seasoned vinegar mixture over the cabbage mixture and toss to thoroughly combine. Cover with plastic wrap and refrigerate for 20 to 30 minutes.

In a small bowl, combine the mayonnaise, sour cream, horseradish, and mustard and stir to combine. Add to the coleslaw and toss to combine thoroughly. Cover and refrigerate for at least 1 hour or overnight before serving.

Spicy-Sweet Coleslaw

4 cups of packaged cabbage and carrot coleslaw
1 1/4 cups of red bell peppers (cut into two inch strips)
1/2 cup diagonally cut scallions
1 cup cherry or grape tomatoes halved

Dressing:

2 tbsp horseradish
1 tbsp honey
1 tbsp cider vinegar
1 tsp salt
1 tsp pepper
1 tbsp canola oil

Mix all veggie ingredients in a bowl. In a seperate bowl mix first 5 dressing ingredients well. Then add canola oil and shake/mix well. Add to coleslaw mix and serve.
