Menu Thread- 9/18
Getting back into the groove of sticking to my plans.
Sunday- Chickpea masala over rice, salad
Monday- Pot roast in the slow cooker. Served of mashed potatoes
Tuesday- Greek marinated chicken, Mediterranean quinoa casserole
Wednesday- leftover pot roast
Thursday- leftover chicken
Friday- sauteed lemon fish, green beans, rice
Saturday- ST dijon pork chops, roasted broccoli, baked potatoes

Busy weekend didn't leave me time for grocery shopping or meal planning. Using what's in the fridge, freezer and pantry.

Sunday: fettuccine with garlic, oil and spinach/grilled portabellos with slices of tomato, melted mozzarella and some basil
Monday: falafal and hummus over a mixed greens salad
Tuesday: stir fry - baked crispy tofu, mushrooms, red pepper in some sort of spicy sauce
Wednesday: leftover falafal and hummus, salad
Thursday: WILL I BE ABLE TO EAT?! I'M TOO EXCITED TO SEE ADELE IN CONCERT!
Friday: Not sure - ordering in maybe.

Wednesday: Mushroom risotto with bacon
Thursday: Filled round zucchini with tomato sauce and a side of rice
Friday: Salad with caramelized grapes and Camembert on toasted baguette slices
Saturday: Whole Cauliflower with bread crumb topping and a side of cheddar potatoes.
Sunday: Oktoberfest. I'm lucky if I even remember what I eat when I get home!

Monday: I made sauce sunday night with meatballs and sausage so we had that with raviolis
Tuesday: Turkey Burgers and sweet potato tator tots
Wednesday: BBQ Chicken Quesadillas and Smoked Gouda mac and cheese

What is this doritos crusted chicken you speak of? Is it literally just replacing Breadcrumb with Crushed Doritos? I think my DH would marry me all over again for these!

Yes, it's pretty much that. I have made this one.
It's so good- esp with Cool Ranch Doritos.

Yes, it's pretty much that. I have made this one.

Yup! I make I it the same as the recipe above, except I cut my chicken into tenders and dip them in flour, egg wash and then Doritos. I use red Doritos and serve with ranch dressing to dip. So good!
