I don't do the cooking but my family always has cabbage, boiled potatoes, a big green salad, soda bread, mac n cheese, and chicken nuggets for the kids.

I’m making corned beef in the crockpot with potatoes and carrots (we don’t do cabbage). Irish soda bread on the side.

I’m not making corned beef (we’re vegetarian and it’s actually not something most Irish people eat, especially on St. Patrick’s Day) but I love me a good serving of colcannon. Look it up - it’s an awesome side dish!

When I cook Corned Beef I make:
mashed potatoes
cabbage salad
irish soda bread
and usually a dessert

I always make shepherd's pie, only because I don't like corned beef. Poor DH asks for it but I tell him to go to moms lol
I love colcannon, too.

Yes. Colcannon is DELICIOUS! Who doesn't love buttery mashed potatoes and cabbage?!?
For the history of corned beef you are correct! I wanted to post this in the thread:
"Why corned beef?
Beef was not readily available in Ireland and was considered a luxury and that’s why the traditional Irish meal centered around ham, the bacon. But when these Irish got off the boats in America it was quite the opposite. Corned beef was the meat that they could easily and more cheaply get their hands on and, so, this became the meal of choice for generations of Irish Americans to come.
In New England, a tradition formed of having a boiled dinner. For this dish, the corned beef, cabbage, and root vegetables such as carrots, turnips, and potatoes were boiled.
New York Jewish corned beef
Many maintain that the dish is simply not Irish at all. The close proximity of the Irish and Jewish communities at the time is said to be largely responsible for the popularity of corned beef among the Irish immigrants. According to thekitchenproject.com, when the Irish arrived in America, they couldn’t find a bacon joint like they had in Ireland so they gravitated toward the Jewish corned beef, which was very similar in texture.
Irish workers free dinner
Francis Lam on Salon.com reports that, years ago, the bars of early 20th century New York would offer a free dinner of corned beef and cabbage to the Irish workers who would crowd in after working all day on the building sites.
The Irish builders would still have to buy a few drinks in order to get their supposedly free dinner, but the main reason that the corned beef and cabbage dinner is thought to be of Irish origin is not because they were enticed by a traditional meal so much as a cheap meal."

Not at all! I had it in a bunch of places in Ireland and they didn’t use bacon either.

I just looked it up and holy sh!t that looks good. I want to make it but feel like I want to try an authentic recipe first. Looks so yummy. Game changer

I think I’ll make potato leek soup and shepherds pie tomorrow. DH likes corned beef but the smell of it makes me sick. Oh and green Mac n cheese!
When I was in Girl Scouts we used to have a St. Patrick’s day party with corned beef and cabbage but none of the kids would eat it so the leader made us green Mac and cheese. My mom started making it for me every year. I feel like DD will love it. I debated making it with pesto but I really want that 90’s nostalgia so I’m dumping a bunch of food coloring in it.
