If you completely DIY'd your kitchen with IKEA..

Is this something that is actually doable to DIY?? Am also wondering if they still install the countertop, sink, and faucet for you or if that must be DIY as well.

While I'm not too concerned about the cabinet install, I am concerned about the other aspects, like flooring, electric, etc. and if certain things can still be paid to be done. I don't want to pay for labor for the entire kitchen, as I heard it gets pretty pricey to do it all through IKEA contractors

It is possible, I did not do it because my ex wasn’t very handy.

What I did was I put together all the cabinets myself, and then hired someone to install them and do the electric and water, etc. It cost me about 1300 for the installation. It was done in two-three days. I have a full Ikea kitchen, except for appliances. I didn’t get my floors done, and I didn’t need a back splash.

My husband has done two Ikea kitchens. You can definitely do it yourself, but I wouldn't if you're not experienced with such projects. My husband used to work for a contractor and he had his dad helping him who is also very experienced with home renovation projects. The two of them still ran into some issues, had to do things over, etc. Once you get used to to Ikea's systems/instructions it's not too bad, but there is a definite learning curve for the install.
