Favorite side dish for a BBQ?
I know...wrong board but this gets way more action.
I have to bring a side to a BBQ and I'm looking to bring something different than the usual. Anyone have a good side dish recipe?

Favorite side dish for a BBQ?
mexican street corn salad.
since i discovered the recipe, i want to eat it at every meal. so yummy and perfect for a bbq.
not sure of your crowd, but my peeps love them some arroz con gandules. very easy to make and inexpensive.

Preheat oven 350°
1 stick butter
1 can cream corn
1 can reg corn (drained)
1 beaten egg
1 8oz. Pkg. of corn muffin mix (I use jiffy and it’s 8.5oz I use the whole thing)
16 Oz container sour cream
Melt butter in an 8x8 square pan
Mix remaining Ingredients & melted butter in a bowl (leaving the 8x8 pan coated w butter) then pour the entire mixture into the pan
Bake for 1 hour-ish. Each oven is different. Check starting at 50 min. It’s done when edges are brown. It will look jiggly in the middle when it comes out. That’s normal.
Serve warm
While I’m here I may as well add the Health salad recipe. It’s an old 0pt WW recipe
HEALTH SALAD
- bag of shredded Cole slaw mix
- 1/2 medium English cucumber (sliced thin)
- 1/2 medium red onion (sliced thin)
- 1 grated garlic clove(so it melts in there)
Start w 1/2 of it and taste as you go)
- 1/2 red pepper (sliced thin)
Dressing:
1/2 teaspoon salt
1/2 teaspoon black pepper
2 1/2 tablespoons of sugar
2 1/2 tablespoons of apple cider vinegar
1 tablespoon of olive oil
1 tablespoon of water
Put Cole slaw mix and all other salad ingredients in a bowl
Then in a small bowl, mix dressing well, then pour over Cole slaw. Mix and coat with dressing. Let sit in fridge at least an hour before serving and give another good mix.

The easiest way is to get a few bags of the frozen Mexican corn from trader joe’s and mix it with Greek yogurt, mayo or sour cream and a fresh squeezed lime. The corn comes with a packet of cotija cheese but I like to add a little more.

My cousin makes this amazing quinoa salad with mozzarella balls, cherry tomatoes (sliced in half), basil, salt, and pepper. It's tossed in olive oil and balasmic vinegar

i don't remember the measurements... i do it to taste.
this is the recipe i found and love. it's a great side in the summer.

a little dryer than a potato salad.
the one just linked is very similar to the one i found. i change the cheese to be a mexican cheese instead of feta.

I make these potato packets
In a price of aluminum foil
Diced potatoes
Bacon bits
Cheese (shredded)
Onion
Salt n pepper
My sis uses a dab of sour cream but I don’t bc I don’t like it lol
Fold it up. Grill it. Cheese gets melty
One per person. Can make ahead of time and just throw on the grill
