Let's not ignore grilled vegetables

To not focus purely on meat (or "pretend meat"), what types of vegetables do you like to grill?

I'm actually hoping to get some good ideas from this thread for myself. Chat Icon

Zucchini
Squash
Asparagus
Corn (on the cob. I tried loose kernels on the grill, but they all fell through the grate... Chat Icon Chat Icon )

I don't really eat veges because they make me gag for some reason but I do love thinly sliced sweet potatoes drizzled with olive oil and some kosher salt and pepper- grilled on a vege grill pan until crispy.
OMG soooo good.

This reminds me of the time we had a bbq and invited DH’s friend and his wife, who is vegetarian. I told DH to tell his friend what we had (veggies, salads) and ask if there was anything else she might like. His friend’s response was “nah, she’ll just eat buns.”

I don't personally like to use the grill--I have really sensitive eyes, and I always tear up--but I like when other people grill zucchini for me lol

I always laugh when people think vegetarians are so much more healthy than meat eaters.
Most of the ones I know eat nothing but processed carbs- bread, pasta etc since they can't eat meat.
And if you ever read the label of those "impossible" meats- they read like a chemistry set.
14 ingredients all highly processed and created in a lab to make a "burger" as opposed to one ingredient when you're eating real meat

I love using the grill basket, my favorite mix is peppers, onions and fresh pineapple chunks. So yummy.

Let's not ignore grilled vegetables

I have a mostly plant based diet (so no meats, but I do have fish occasionally). I use grill mats and can pretty much grill any vegetable with that: Peppers, zucchini, asparagus (my fave), broccoli, tomatoes, potatoes, etc. Grilled Fennel is so good too!
I also use them to grill fish about once a week.

corn & asparagus are my go-tos, but my new favorite is sweet potato.

I cut them in circles ( unpeeled) & oil & salt them, and place them directly on the grill.

Mushrooms & Onions (I like to do them together - it's a good combination)!

I love grilled broccolini and (grilled or non-grilled) tomatoes tossed with it... I make a salad out of that with some evoo and salt...

Peaches (not a vegetable, but truly delicious grilled) and I put in salads or eat plain.

Jalapenos to add kick to certain meals.

ETA: I think corn on the cob was obvious...

i've done the whole spectrum of meat/vegetable eating.

on the grill, i like

eggplant
onions
small potatoes
tomatoes
peppers (all colors)
asparagus
broccolini

tossed in a bit of olive oil, salt, pepper, and grilled in a basket. then i drizzle balsamic vinegar or a balsamic glaze over it.

if i'm feeling i want to make it a meal and not a side, i add some mozzarella.

i also love a good old fashioned onions and peppers with a bit of red sauce.
