What’s for dinner?

My dinner was boring. Penne in a tomato cream sauce with pecorino.

However, I started prep on an exciting Chat Icon Korean pork belly. It’s marinating and then tomorrow I’ll sous vide it. Then Saturday I’ll crisp up the skin and serve it with sesame broccoli. SO loves pork belly, so I hope I get it right.

So what’s for dinner today or this weekend?

We are making home made pizzas tonight.

Tomorrow will be take out- our Friday night tradition

Tonight I am quickly putting together Fettucine Alfredo as while it was nice and quiet all day for work (thought it had to be a fluke), it is starting to get busy and I probably will work OT.

Tomorrow--not sure, maybe Cheese and Parsley sausage.

Saturday--hubby and I are going to a bday dinner in an Igloo. I truly hope it is warm as with the snow coming it sounds very cold to me. Chat Icon

Sunday--no clue yet. I go shopping on Sundays and it is football so no one really even pays attention to what I make. Just as long as they get fed.

I started a thing this week where we will not be eating out at all for the whole month. We will see how long that lasts, ha!

This week we have had turkey dinner, steak, pasta and meatballs and chili. Over cooking already Chat Icon

"Healthy Chicken Parm" - Baked chicken (no breadcrumbs) layered with homemade sauce and a little torn fresh mozzarella. Fresh French green beans cooked in a light garlic and tomato sauce. Delish!

Thank you, I'm feeling better, still a lot of congestion. Over the weekend I was exhausted, but taking care of my parents who are positive too.
Its the worst when all you want to do is sleep but feel like you must get up and feed others...

Thank you, I'm feeling better, still a lot of congestion. Over the weekend I was exhausted, but taking care of my parents who are positive too.

Chat Icon Chat Icon Chat Icon I had that yesterday, it was Penne in a Vodka sauce. I didnt have any meat, it felt so ghetto and I thought it was boring as well. My son was happy though.

My DH finally went to the market. After the move its been slim pickings over here. we are getting already cooked fried chicken, potato & macaroni salad with Hawaiian rolls.

We were supposed to get the rotisserie chicken but its like Armageddon by me. No raw chicken, veggies or $7 rotisseries. Idk if its because of the impending snow or Covid or both. Chat Icon

No you aren't. we order out alot, two days ago it was Jersey Mikes, the day before that my son ate instant mac & cheese single serve. So far I only cooked twice this week.

We are trying to cut down since we just bought a house and did massive renovations.

I'm not trying to hijack your post but I need to vent to people who will understand. I have come to hate making dinner. The pandemic did that to me. Right now, I'm super busy at work and I'm feeling a little run down. Every night, I come home and I make dinner against my will. And every night my DC b!tch and moan, call it "disgusting" and refuse to eat and then cry they are hungry like an hour later. I am so annoyed. I resent making dinner to begin with - meal planning, shopping, executing healthy meals- and really all they want is disgusting Ellio's.

Back to our regularly scheduled programming.

You are not alone. Mine all complain at times and I get burnt out as they are picky so it is hard.

I feel you and I don’t have anyone to cook for about 50% of the time. Thankfully, SO doesn’t complain because he will eat mostly anything. The one thing he will do is pop in a tray of bacon and declare that everything needs a side of bacon sometimes. I don’t care that he makes it, but rather that ihre gets in my way.

And I completely hear you about not wanting to cook since the beginning of the pandemic. For months I could not go out and takeout isn’t the best here and it’s expensive. What saved me was ordering Hello Fresh for some meals. Other meals became one-tray meals or soups. I could not take cooking 2-3 times a day.

Lol, yes pretty ghetto. It was a holiday yesterday and everything (including supermarkets) was closed. For lunch I had eggs in purgatory because I was trying to use up that batch of sauce I made.

It was also like Armeggedon here these past few weeks. It doesn’t happen in snow, but around holiday times. If there is a holiday on a Saturday, or any holiday that isn’t a Sunday, you have to go super early in the morning. People think they will not have enough food with the supermarket being closed on that holiday Saturday and then they are all closed on Sundays.
