Re: Any chicken stir fry recipes???

I have no real recipes - I just usually wing it with stir fry things. Throw in some sesame oil, minced garlic, ginger, veggies, chicken or beef and various sauces, depending on what I'm iin the mood for at the time!

I also just "wing it" and just add a bit of everything into the pan --- don't measure and it almost always comes out the same or very similar.

Re: Any chicken stir fry recipes???

Made stir fry tonight.......
Boil white rice and set aside.
I slightly blanched... fresh broccoli, 1 red and 1 green pepper and set aside. In a pan or wok... heat, add about 2 tbsp olive oil. Brown chicken (breasts cut into strips) on both sides and remove. Just brown, dont cook thru or you will dry it out. Then after chicken is all done, in the same pan I added a little more olive oil, onion sliced and sauteed while scraping brown bits off the botttom. Then I minced 2 garlic cloves, asdded them and sauteed for a few secs. longer. Then added my peppers, broccoli and fresh sliced mushrooms. I added about 2/4 cup of dry white wine and soy sauce. kept sauteeing and then added my chicken and juices from the chicken back to the pan. Added a little salt and pepper, more soy and cook for about 5 min. I alo pit about a tsp of flour in about 1/2 c of water, mied and added to the pan to thicken the juices. You can add more soy and wine if you'd like and just keep turning on med-high heat until chicken is cooked thru. erve over rice. It ws sooo good.
