More WW pumpkin recipes

Pumpkin Flan

Ingredients


1/2 cup unpacked brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/8 tsp cayenne pepper
1/8 tsp table salt
16 oz canned pumpkin
1 cup fat-free evaporated milk
1/4 cup orange juice
3/4 cup fat-free egg substitute
8 Tbsp lite whipped topping
1/2 medium orange(s), cut into 8 thin wedges


Instructions

Preheat oven to 350°F.


Stir together sugar, cinnamon, cloves, cayenne and salt in a large bowl. Whisk in pumpkin, milk, orange juice and egg substitute; divide among eight 6-ounce custard cups.


Set custard cups in a high-rimmed roasting pan and pour boiling water around them to a depth of 1 inch. Bake until firm around edges and slightly puffed, about 45 minutes. Remove cups from water (careful not to burn yourself), cool completely, cover and refrigerate. Before serving, top each cup with a tablespoon of whipped topping and an orange wedge.

Pumpkin Custard with Caramelized Pecans

Ingredients


1/3 cup sugar
2 Tbsp water
1 cup pecan halves, coarsely chopped
2 cup 1% low-fat milk
1/2 tsp ground cinnamon
1/4 tsp ground cardamom
1/4 tsp ground cloves
1/2 cup unpacked brown sugar, packed
4 large egg(s)
2 medium egg white(s)
2/3 cup canned pumpkin, solid-packed
1 tsp vanilla extract


Instructions


Preheat the oven to 350°F. Arrange eight 6-ounce custard cups in a large roasting pan.


Combine the sugar and water in a saucepan; bring to a boil. Cook, without stirring, until the sugar turns a light caramel color, about 5 minutes. Stir in the pecans and toss to coat. Cook until the mixture is a dark caramel color, about three minutes more. Quickly pour the pecan mixture onto a large nonstick baking sheet and cool completely on a rack. Break nut mixture into small pieces and sprinkle into the custard cups. Set aside.


Combine the milk, cinnamon, cardamom, and cloves in a saucepan and bring to a boil. Cook, stirring occasionally, 2 minutes. Whisk the brown sugar, eggs and egg whites in a large bowl. Whisk the hot milk mixture into the egg mixture. Stir in the pumpkin and vanilla. Ladle the mixture into the custard cups.


Place the roasting pan in the oven, then pour enough hot water into the pan to come halfway up the sides of the custard cups. Bake until toothpick inserted in the center of the custards comes out clean, about 30 minutes. Remove the cups from the roasting pan and cool on a rack. Cover and refrigerate at least 4 hours before serving.

Praline Pumpkin Cake

Ingredients


1 sprays cooking spray
15 oz canned pumpkin
12 oz fat-free evaporated milk
1/4 cup fat-free egg substitute
1/2 cup sugar
4 tsp pumpkin pie spice
18 1/4 oz unprepared white cake mix, 1 package
1/2 cup pecan halves, chopped
1/4 cup reduced-calorie margarine, melted


Instructions


Preheat oven to 350°F. Coat bottom and sides of a 13 x 9 x 2-inch baking pan with cooking spray.


Stir pumpkin, milk, egg substitute, sugar and pumpkin pie spice together in a medium bowl until smooth; pour into pan. Sprinkle dry cake mix over pumpkin mixture and gently press it into pumpkin mixture to moisten. Sprinkle cake with pecans and then drizzle margarine evenly over top.


Bake, uncovered, until knife inserted in center of cake comes out clean, about 50 to 60 minutes. Cool completely before slicing into 16 pieces.

i just made the creamy pumpkin pie recipe - it's settling in the fridge

good thing i put it through the recipe builder first though! the way they had it it would've been i think like 8 pts per slide so i adjusted it and now it's 4 - i think it said 2!

anyways just a word of caution, but i'm sure it'll be worth all 4 Chat Icon

It was okay. Wasn't THE best. It's more like a cream pie instead of a pie. I really wanted pumpkn PIE Chat Icon

Here is the recipe:

Creamy Pumpkin Pie

Ingredients

1/2 cold cold milk
1 package (6 serving size) vanilla flavor instant pudding & pie filling
1 tspn pumpkin pie spice (may substitute 1/2 tspn ground cinnamon, 1/4 tspn ground ginger and 1/8 tspn ground cloves)
1 cup canned pumpkin
1/2 cup frozen non-dairy lite whipped topping, thawed
1 graham cracker pie crust

Instructions


In large bowl beat milk, pudding and spice for 1 minute. (Mixture will be thick).
Add pumpkin, stir until well blended.
Gently stir in whipped topping.
Spread in crust.
Refrigerate at least 2 hours or until set.


**The original recipe called for 2 1/2 cups of the whipped topping - I put the points in the recipe builder and it came out to like 8 pts!!! So I adjusted it to this and it was 4**

Mind you, I did use a regular graham cracker crust. They have the lghter ones but I didn't see any. Ah wells.

ETS: If you do this recipe I would use the reduced fat crust AND fat free cool whip (I used light). Supposedly if you use that crust plus 2 1/2 cups of the cool whip it's only 3 points per slice.

Fluffy Pumpkin Cheescake
6 servings - 4 pts each

Ingredients

1 reduced fat graham cracker crust
1c. pumpkin puree
1 1/2tsp. pumpkin pie spice
2 eggs
1 pkg fat free cream cheese, room temperature
1/2c. splenda

Instructions


Cream together all ingredients. Pour into pie crust. Bake at 350 for 40 minutes.

I bought it at Stop & shop in the spice aisle. Otherwise, it's just allspice, nutmeg, ginger and maybe something else.

Trader Joe's sells their own pumpkin pie spice for 1.99 (I think)

It is a big bottle compared to the small container you buy by mccormick for like $5 bucks in the grocery store.

I do not like all of the spices in pumpkin pie spice, so I just use nutmeg and cinnamon.
