Don't worry about the space- we hosted once while living in a small condo- we made it work...
we usually have a ham and sometimes lambchops too a pasta-linguini and white clams usually
Italian Easter Pie broccoli and garlic with lemon juice- served cold some sort of rice or potatoe melon and proscutto(sp?) asparagus with breadcrumbs
baked clams stuffed mushrooms fried eggplant
you could do an antipasto salad
some easy appetizers too dips for when people are sitting around
ask others to bring the desserts to make it easier on you

Depending on when the baby comes we will most likely be hosting easter. I am thinking:
Honeybaked ham (you can also do some kind of pork or lamb) mashed potatoes sweet potatoes or yams green bean casserole carrots
We dont do as big of a spread for Easter as we do for Christmas.

I'm hosting for the first time, so I really don't know what I am doing, but I am thinking:
app: spinach & artichoke dip pepperoni & cheese zuccini pie
First Course: Penne ala Vodka
Main: Baked ham sweet potatoes mashed potatoes string beans, garlic & bread crumbs stuffed italian peppers corn
Does anyone have the recipe for Italian pie - the meat one?

We're hosting and now it's crunch time I'm definitely doing rack of lamb but aside from that, I'm lost! I'd love to hear your suggestions/menus!

Recipe for the Italian Pie
3 pounds ricotta a little grated cheese a little parsley 2 cups shredded mozzerella 1 stick pepperoni stick, no skin, chopped 1 pound unsalted ham in a chunk-chopped 10 eggs
MIX IT ALL TOGETHER
Buy ready pie crust-pillsbury pie plate pour in
With a fork make a design on the edges
tin foil the edges so it doesnt burn
cook for one hour at 350
Stick toothpick in- if it is dry it is done, moist cook a little more
cool it for a half hour
Makes 3 pies
