I don't think anything, it is all the cooked fat from the meat. Mine does the same thing. I use the meatloaf mix (pork, beef and veal).

Paula Deen made a meatloaf on her cooking show once and put 2 pieces or bread under the meatloaf while it cooked to suck up all the grease. I am thinking about trying that the next time I make one.

you can try a Meatloaf pan. It keeps the meat up off the bottom of the pan and away from the grease
