30 minute meals
The fall is about to get busy for our family, and I suspect it is for others too. I made a great dinner tonight and was surprised by how fast it was done. This inspired me to ask for other 30 minute (or less) recipes.
Please post your favorite healthy, kid friendly, 30 minute meal.
Tonight we had: Fish Tacos, I used this recipe for the fish and made my own sauce. Mexican Rice from a box Homemade Guacamole Chips
One of my other favs is Macaroni and Broccoli. It just lacks on protein a bit, sometimes I make this with leftover chicken.
Boil water for a box of ziti, add ziti, after the water boils again add a few heads of broccoli florettes cut into pieces.
Meanwhile put 1/4 cup olive oil, a couple minced cloves of garlic and black pepper to taste in microwave for 30-60 seconds.
Cook until pasta is done, broccoli should be soft. Save 1/2-1 cup of the cooking water.
Drain pasta and broccoli and put back in pot. Add oil, about 1/4 cup of reserved cooking water, mix well. Add 2/3 cup parmesan cheese, mix well. If mixture looks too dry add a bit more water. Cover pot and let it sit for 5 minutes before serving.
