Sweet Potato Recipes?
I made sweet potato fries last night for the first time and they were delish. Just sprinkled them with some EVOO salt & ground pepper and baked them in the oven at 425 for about 30 minutes.
I really haven't had much sweet potato in my life but I loved the taste.
So do any of you have great sweet potato recipes that I can try out?

Thats actually my favorite way to make them, sliced really thin so they get crispy!
But I'll also do a maple syrup/butter/brown sugar glaze (nuke the potatoes first to soft, cut into chunks, drizzle mixture, bake until done)
You can mash them with heavy cream and butter to make mashed potatoes
or bake in a casarole dish with mini marshmellows, coconut, brown sugar and candied walnuts (or pecans) - again I would nuke them first to get them soft first.

I grill them with a mixture of honey and butter for about 6-8 minutes per side.
Yummy, I love sweet potatoes.

It really depends on the size, that's why after I cut them in half I quarter them, they cook faster that way. I'd say about 20 minutes. I grill them face side up and then for the last 5-7 minutes, I put them face side down to get nice grill marks on them.
Oh, I usually make criss cross markings on the top to get those neat lines.
