I make my kid-friendly version the same way, except that instead of the crackers I put slices of buttered bread on top...it comes out nice and crispy. Never tried the crackers but that sounds good too!

Re: Macaroni & Cheese recipe wanted

Try this one, its off the box of Ronzoni elbow pasta and I make it all the time. Definitely kid friendly!!

Sure, its easy enough!

Ingredients
2 tablespoons of butter or mnargarine
1/4 cup finely chopped onion (optional)
2 tablespoons flour
2 cups milk
3/4 teaspoon salt
1/2 teaspoon dry ground mustard (optional)
1/4 teaspoon ground black pepper
2 cups (8 oz) uncooked elbow macaroni
2 cups shredded sharp cheddar cheese
8 oz. sliced American cheese, broken into 2-in. pieces

Instructions
Heat oven to 350. In medium saucepan over medium heat, melt butter; add onion. Cook 2 minutes. Add flour; cook 1 minute, stirring constantly. Stir in milk and seasonings; cook, stirring frequently, until mixture boils and thickens.

Meanwhile, cook pasta according to package directions; drain. Stir cheeses in milk sauce. In 2-Qt. baking dish, stir together pasta and cheese sauce*. Bake for 30 minutes or until hot and bubbly.

Makes 6 servings (1 cups each).

*I also add some breadcrumbs to the mixture before baking it, as well as sprinking the top with breadcrumbs to give it a nice crunchy top! Its always a big hit here, and it not hard to make.

Re: Macaroni & Cheese recipe wanted

I know this is an old post, but wanted to add my favorite (Better Homes & Gardens) I usually use 12 oz. of Kraft Deluxe American cheese slices as my cheese. (NOT Kraft singles, use the real cheese.) Sometimes, I cut one of the remaining slices into triangles and put on the top before baking - they get crispier.

Macaroni and Cheese

Ingredients
8 ounces dried elbow macaroni (2 cups)
1/2 cup chopped onion (1 medium)
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/8 teaspoon black pepper
2 1/2 cups milk
1 1/2 cups shredded cheddar cheese (6 ounces)
1 1/2 cups shredded American cheese (6 ounces)

Directions
1. Cook macaroni according to package directions. Drain; set aside.

2. Meanwhile, for cheese sauce, in a medium saucepan cook onion in hot butter until tender but not brown. Stir in flour and pepper. Add milk all at once. Cook and stir over medium heat until slightly thickened and bubbly. Add cheeses, stirring until melted. Stir in cooked macaroni. Transfer mixture to a 2-quart casserole.

3. Bake, uncovered, in a 350 degree F oven for 25 to 30 minutes or until bubbly and heated through. Let stand for 10 minutes before serving. Makes 4 servings.

this is really similiar to the one that I make, all except for the onion, and the kind of cheese...I make a cheese sauce with flour and milk and pepper, but I use cheddar cheese..I think that I might try it with onion next time...yummy
