Pasta Rustica with Chicken Sausage and Three Cheeses


Ingredients:
2 Tbs. olive oil
1 yellow onion, chopped
2 garlic cloves, minced
3/4 lb. chicken sausage, casings removed
1 tsp. dried basil
1 tsp. dried oregano
1/4 tsp. hot red pepper flakes
1 (28 oz.) can crushed tomatoes
Salt, to taste
1 lb. penne pasta
1 1/4 cups ricotta cheese
2 cups fontina cheese, shredded
1/2 cup grated Parmigiano-Reggiano cheese

Directions:
1. In a large pot over medium heat, warm the olive oil. Add the onion and cook until golden, about 5 minutes. Add the garlic and cook, stirring, for 1 minute. Add the sausage and cook, breaking it up into bite-size pieces, until no longer pink, about 6 minutes. Stir in the basil, oregano and red pepper flakes. Add the tomatoes and bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, until thickened, 10 to 12 minutes.

2. Preheat an oven to 350ºF. Lightly oil a baking dish.

3. Cook pasta and Drain well.

4. In a large bowl, toss the pasta with the sauce, the ricotta and fontina. Spread in the prepared baking dish and sprinkle with the Parmigiano-Reggiano.

5. Bake until the cheeses are melted and the tips of the pasta are crusty, about 30 minutes. Let stand for 5 minutes before serving. Serve hot. Serves 6 to 8.

I don't have a recipe, but I always make pasta with chicken (or turkey) sausage, broccoli, and tomatoes (the kind in the can). I sort of wing it. Basically, I cook sausage in pan and then remove. Then I throw in minced garlic and onion and some olive oil and cook until garlic is light brown. Then I throw in a can of chicken broth to deglaze the pan. Usually, I season it with salt, pepper, oregano, basil, whatever I feel like in the moment. Then I throw in the broccoli (to steam if fresh or defrost if frozen). Next, I cut up the whole peeled can tomatoes and throw them in. Finally, I put in the cooked pasta and sausage. I typically season it through out depending on taste. I also will add more olive oil to pull it all together at the end. Serve it with parmasean. It is a very light sauce with the broth being the main ingredient of the "sauce". I sort of created as an alternative to a pasta I always bought at a restaurant. Sundried tomatoes can also be used.
