Re: baked chicken parm???

I bake my chicken cutlets on a cookie sheet, until they are almost done, then I assemble the chicken in a pan, with sauce and cheese and bake in the over for about 20 minutes or so until the chicken is cooked all the way, sauce is hot and cheese is melted.

good Luck!!

Re: baked chicken parm???

Ok...

I fry the cutlets after they are breaded.

Then, add sauce over the cutlets....then grade cheese(mozzorella). I also add Parmesan cheese on top to drizzle.

I bake in the oven for 30 mins. Remove foil and let it bake for 15 minutes.

Very simple & yummy!

Re: baked chicken parm???

I fry the cutlets as well (in olive oil) and then when they are done, layer them in a baking dish (sauce, chicken, more sauce, cheese) and put it in the oven till the cheese melts

Re: baked chicken parm???

Since you did say that you did NOT want to fry the cutlets, I found this for you:

Baked Chicken Parmesan

Here's a top-notch trio - golden-crusted chicken, marinara sauce and linguine!

1/3 cup fine dry Italian-seasoned bread crumbs
1/4 cup freshly grated Parmesan cheese
4 boneless, skinless chicken breast halves
2 large eggs, beaten
2 teaspoons olive oil
1/2 cup shredded mozzarella cheese
1 (9-ounce) package BUITONI® Linguine
1 (23.5-ounce) container BUITONI® Marinara Sauce, heated according to package directions
4 fresh basil sprigs (optional)
PREHEAT oven to 375° F. Lightly grease 8-inch-square (2-quart) baking dish.
COMBINE bread crumbs and Parmesan cheese in shallow dish. Dip chicken in eggs, then cover with bread crumb mixture. Arrange chicken is prepared baking dish. Drizzle with oil.
BAKE for 25 to 30 minutes or until chicken is tender and no longer pink in center. Sprinkle with mozzarella cheese. Bake for an additional 2 minutes or until cheese is melted.
PREPARE pasta according to package directions; drain. Toss pasta with sauce; divide among plates. Top with chicken. Garnish with basil.
Makes 4 servings.

You mentioned in the other post that you don't want to fry......well,

you can get some breadcrumbs and add some fresh parmesan cheese with the bread crumbs.

Add about a Table spoon of Olive Oil or melted butter. Mix well.
In a seperate bowl, mix one egg and some milk. Place the chicken in the eggwash and then the bread crumbs. Bake on about 375 degree oven until Golden. If you are using thin cutlets, I would say about 10 minutes on each side.

I then add the tomatoe sauce on the bottom of the pan and I add a little sauce on top of each cutlet with Mozzarella cheese until melted. (I don't like my cutlets smothered in sauce....I like a crunch to it)

Sorry that I don't have an actual recipe per se.....I seldom use recipes. I improvise. Good Luck!

Re: baked chicken parm???

Perdue makes low-fat breaded chicken cutlets. They are so good. I just heat them up, add sauce and cheese.

Yes, I will use these when I'm in a rush for different things, but breading my own just tastes better!
