It completely depends.
Are you gutting it down to the rafters or only replacing fixtures? What size? Are you moving any plumbing? What fixtures and materials do you want?
You can go to Home Depot and buy the cheapest stock vanity, toilet and tub and spend less than $1K or you could spend tens of thousands.
For example, I'm redoing 2.5 bathrooms in my new house... the 1/2 bath is not being gutted just new vanity, toilet, and tile... even with a granite top on the vanity it's costing me less than $700. with tile installed.
My master bathroom is an entirely different story. We knocked down two adjoining small walk in closets so the room is 13 X 13. We are putting in a whole new layout (which means moving plumbing), new larger exterior window, whirpool tub in a tiled platform, 5 x 5 shower (all tiled with a tiled seat and glass enclosure), double vanity with granite top, decorative tiles). My contractor suggested I vault the ceiling an put in a skylight but I think we maxed ourselves out. We are spending more on our master bath than on our new kitchen It's something we really wanted and we agreed... no more big vacations and just throw the money into the house.

i agree it depends on what type of material you use and if your relocating plumbing or not
