I sometimes make a crustless cheesecake with splenda instead of sugar that comes out ok. It's not pretty but it's tasty. I usually do them as mini-cupcakes so they are bite sized since they don't rise so much. It looks intentional that way...LOL
And here is a link to a recipe data base that may help. There are a couple of dessert forums.
