What are some things that we "must see or do" in Disney???
I haven't been there in a while...FI has never been there...I am so excited to go again!!! 
Any suggestions??

Havent been there in about 4 years, but defintlly the Electric Light Parade at Disney at night. FYI..get a good spot early.

Fireworks at Epcot.
They put on the most amazing firework show around 9 everynight. You could spend the daywalking through the countries, and if you like beer, you could get a different one in each country.
Then you could have dinner in your favorite country, and end the day w/the fireworks.
It's my favorite thing to do in Disney.

go on the segway tour at epcot. it's so much fun. and if you do the early in the morning one you get to tool around world showcase on your segway before regular guests are allowed back there.

I agree about the Segway tour -- but try not to schedule it when there's Extra Magic Hours at Epcot in the morning.
If you are staying at a Disney resort go to the Animal Kingdom on their early day and hit the safari -- more animals are awake earlier in the day plus the line is not too long. Expedition Everest is a great ride!! You get totally soaked on the Kali RIver Rapids so save that for when you are ready to head out. The Lion King Show is really cute.
MGM/Disney Studios - the Lights Motors Action show is exciting to see. Beauty & the beast is very well done!

Cinderellabration
In MGM (MGM is an easy one day park), or one morning and one evening to see Fantasmic, which is incredible)

EPCOT (I usually do teh rides one morning, world showcase one afternoon, and illuminations another evening, but you could spen a whole day and do it all:

Honey I Shrunk the Audience
The MAelstrom
Illuminations
Animal Kingdom (A half day park. Get there early for extra magic hour or whatever they call it now)

Oh and at Pleasure Island, we really enjoyed Adventurer's Club and Comedy Warehouse. We went to both the night we got engaged

Do not miss Soarin in EPCOT. It is amazing.
Don't forget to wear your ears! You never know what little surprises you might get!

Ha, ha. You sound like me. If I had to pick my faves off the top of my head, they would definitely be Illuminations at MGM...I love that park in general and have been on TZ's Tower of Terror a gazillion times. And the fireworks at Magic Kingdom after hours and the Illuminations at Epcot after hours. It's awesome.
We were there in Jan and you have to check out the new "ride" at Epcot called "Soarin' over California". It's pretty cool. We also love all the 3-d ones like Tough to be a Bug (AK), Mickey's Philharmagic (MK), Honey I shrunk the Audience (Epcot) and the Muppets (MGM).
