These are the Recipes I make most often:


Sweet Sausage Marsala
----------------------------------

INGREDIENTS:
1 (16 ounce) package farfalle (bow tie) pasta
1 pound mild Italian Turkey sausage links
1/3 cup water
1 clove garlic, minced
1/2 large onion, sliced
1 medium green bell pepper, sliced
1 medium red bell pepper, sliced
1 tablespoon Marsala wine
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 pinch dried oregano
1 pinch black pepper



DIRECTIONS:
Bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
Place whole sausages and 1/3 cup water in a skillet over medium-high heat. Cover, and cook 5 to 8 minutes.
Drain and thinly slice.
Return sausage to skillet. Stir in garlic, onions, peppers, and Marsala wine. Cook over medium-high heat,
stirring frequently, until sausage is cooked through. Stir in diced tomatoes, black pepper, and oregano.
Cook about 2 minutes more, then remove from heat. Serve over cooked pasta.

Grilled Atlantic Salmon with Mango Salsa
-----------------------------------------

INGREDIENTS:
6 (6 ounce) Atlantic salmon fillets, boneless and skinless
2 tablespoons Morton® Hot Salt™
1 tablespoon olive oil

Mango Salsa:
1 ripe mango, peeled seeded and diced 1/4 inch
1/4 cup diced red onion
1 red bell pepper, diced
1 green onion, finely chopped
2 tablespoons orange juice
1 tablespoon chopped fresh cilantro
2 tablespoons olive oil
1/2 teaspoon Morton® Hot Salt™

1. Season the salmon fillets on all sides with Morton® Hot Salt™, pressing the spices into the flesh. Brush salmon lightly with olive oil and set aside.
2. Meanwhile, prepare the Mango Salsa. In a bowl, combine the mango, red onion, red pepper, green onions, orange juice, cilantro, olive oil and 1/2 teaspoon of Morton® Hot Salt™. Set aside.
3. Preheat grill to medium-high.
4. On a seasoned grill, grill the salmon for 6 to 8 minutes per side until lightly charred and just cooked through.
5. Serve with Mango Salsa.

Feta Stuffed Chicken
-----------------------------
1 lb thin cut boneless skinless chicken breasts
1/4 cup dry bread crumbs
1/4 cup crumbled reduced fat feta cheese
Vegetable cooking spray
1 1/2 teaspoons margarine, melted


1 Dredge chicken in breadcrumbs. Spoon 1 tablespoon cheese onto each piece of chicken; fold chicken in half.
2 Place folded breast halves in an 8-inch square baking dish coated with cooking spray. Drizzle melted margarine over chicken. Bake, uncovered, at 400 degrees for 25 minutes or until chicken is done.

Pasta with Sausage & Broccoli - DH's FAVE!

I use a lot of approximations, I don't really write anything down. But here's my best guess.

1 1/2 lb sweet sausage - cut up into 1 inch pieces (you can use chicken sausage)
1 cup Chicken Broth
2-3 garlic cloves - chopped (if you like garlic you can use more, sometimes I do)
2 TBSP EVOO
1/2 Cup Dry white wine
1 tsp Hot Pepper Flake (again, you can use more if you like)
1 bag of frozen broccoli florets
Salt & Pepper to taste


Saute the garlic in the olive oil over medium heat. Add the sausage and chicken broth - cover and let simmer until sausage is cooked. Once sausage is cooked add the wine, hot pepper flakes and broccoli. Cook until broccoli has been heated through. Add salt & pepper to taste. Toss with your favorite pasta and don't forget the grated cheese.
