how exactly do ovulation kits work?
I was peeking at them in Target the other day and they seem to come in packs of 7, and they would tell you if you're ovulating in the next 24-48 hours. So would you start testing at day 10 or so and then test every other day? I'm not sure how the whole thing works.

There are charts in the package. If you cycle is 28 days, I think you start using them (don't quote me) on CD9 and continue using them every day until you get a positive.

Even though the results are for atleast 24 hours, you would still test everyday?

The opks measure the LH surge. They are predictors.....when you have a positive you should be bding. You can get several days in a row of positive opks. Most of the time you don't ovulate until your LH goes over 20 miu's ...but the opks show a positive sometimes at 15 mius. You should actually use opks, twice a day, close to O time.
Personally I prefer the fertility monitor, it's the most accurate opk device out there.
