How do you make Yours?

i kind of just wing it with potatoes, milk, salt (no real measurements). But since i'm making them for the whole family on thursday, i'm kind of scared, and feel like i should have a better 'plan'.

any suggestions?

TIA! Chat Icon

Re: Mashed Potatoes

Wing it! It's all about tasting and adding.

After I boil the potatoes, I Rice them and put them in a stainless steel bowl while piping hot. I add butter, salt, pepper and some milk, cream or 1/2 and 1/2 and mix with beaters. I try not to over mix or let them cool before mixing, otherwise they turn into glue.

Re: Mashed Potatoes

I add butter and milk, but I wing it on the actual amounts. DH and I learned that the mashed potatoes come out creamier when you use warm milk.

Re: Mashed Potatoes

Warm milk is definitely the key to creamy mashed potatoes.

My mom ended up making them. I dont really think my family trusts my cooking abilities (and i cant blame them for that since i cant cook to save my life).. so i was in charge of Broccoli (and even DH made that- he yelled at me not to touch it b/c i would mess it up Chat Icon )

but i'm great at baking, so i made desert stuff Chat Icon

Re: Mashed Potatoes

I used this thread the first time I made mashed potatoes from scratch and I wanted to add this one:

The Perfect Mashed Potatoes

2 lbs. Idaho Russet or Yukon Gold potatoes, skins on
2 T. unsalted butter, room temperature
1 bay leaf
¼ c. milk
¼ c. chicken broth
¼-1/2 t. salt
1/3/-1/2 t. white pepper
Add-ins: 1 head roasted garlic, 1 caramelized onion, 1/3 cup chopped fresh basil or chives

1. Wash potatoes thoroughly and cut into roughly 2" cubes. Try to make them all the same size.

2. Place butter, milk and chicken broth on counter to bring to room temperature.

3. Bring 2" water to a boil, with bay leaf, in bottom of large pot.

4. Steam potatoes, covered, and checking regularly, until knife pierces skin easily, about 15-20 minutes. Do not overcook.

5. As potatoes finish cooking, heat chicken broth and milk in a small saucepan over a low flame. Do not bring to a boil; you are just heating this up.

6. Remove potatoes from pan and place in large mixing bowl.

7. Using hand mixer on low-speed, begin to mash potatoes. Once they are broken up, begin to add in salt and pepper to taste.

8. Add soft butter to potatoes and mix well; mixture should become lighter and fluffier.

9. Pour in chicken broth and milk a little at a time, beating just until mixed, until desired consistency is reached.

10. Add in salt and pepper to taste.

11. Blend in any add-ins to taste; 1 head roasted garlic, or 1 caramelized onion

12. Serve hot.

I make "dirty mashed potatoes" meaning I don't remove the peel, I am too freakin lazy Chat Icon I buy the all purpose potatoes.

I cut them up, boil em and then pour 1% milk, some salt and a healthy amount of margarine and just mash it up. nothing fancy, but YUMMMMMMM

yes! tastes even yummier IMO with heavy cream vs. milk. Gives it a richer taste.

Tyler from Food 911 has a good recipe where you use a ton of garlic and heavy cream - YUM!
