I need help with my Corned beef!
I had 2 corned beef roasts in the crock pot for 3 hrs but there wasn't enough room in there so I switched it over to a bigger pot on the stove now ... Do you think it'll be ok... Do I just simmer it??? TIA!!!

my mom always does her on the stove top. just simmer for 2 1/2 - 3 hours depending on the size.

I boiled mine on the stovetop for an hr and it was perfect. 2.5-3 hrs sounds very long. Not sure though.

I put mine in a pot, cover with water, bring to a boil. Then, skim off top, add onion, potatoes, carrots and lower flame to simmer for 1.5 hour. Then add one cabbage , quartered, and simmer for another half hour.
ETA: This is late in coming - you have probably already been cooking it
